This Cabbage Roll Soup based on my cabbage rolls recipe. It’s as hearty and delicious as it is comforting! Made with boiled cabbage, ground beef, rice, tomato sauce and simple seasonings. Delicious served with garlic bread!

But wait, what is stuffed cabbage soup?
Stuffed cabbage soup is a hearty and comforting meal made by combining ingredients typically used in traditional stuffed cabbage (ground beef, rice, and cabbage) but deconstructed in a broth. The dish is often made with beef or pork and may include vegetables such as onions, garlic and tomato sauce. If you have some homemade bone broth on hand, this would be a great way to use it!

Brown ground beef + onion
Preheat large saucepan over medium heat. Spray along Nonstick Cooking Spray and add Olive oil. Add to Onion, ground beef, salt and pepper. Break apart the beef while it cooks and browns.


Add remaining ingredients
Once the beef is fully cooked and the onions are soft, add garlic and cook another 30 seconds until fragrant. stir in Beef broth, tomato sauce, bay leaves, shredded cabbage, rice and more Salt and Pepper.



Bring to a boil, then let simmer
Then bring to a boil reduce to a simmer Stir frequently until it comes to a boil to prevent the rice from sticking to the bottom of the pan and burning.
Simmer gently for 20 minutes or until the rice is tender. Taste, season and serve!

Save the cabbage roll soup
To store leftover soup, place soup in an airtight container and store in the fridge for up to 3-4 days. You can also freeze it for up to 2-3 months.
To reheat the soup, thaw overnight in the refrigerator if frozen, then reheat on the stovetop or in the microwave. Be sure to stir the soup occasionally to ensure it heats evenly.
