Strawberry Mojito Popsicle Recipe (Feel free to add rum!)

These Strawberry Mojito Popsicles are the perfect way to beat the summer heat. Refreshing, fruity, and a little boozy thanks to the splash of rum. Yum!

The heat is already rising in Florida, and so I have summer on the brain! I grabbed some fresh strawberries and mint at the farmer’s market last weekend, so I decided to make my first frozen treat recipe of the year – these Strawberry Mojito Popsicles!

And what could be better than a freezing treatment. Well, a frozen treat with a little splash of rum. Not much to say here – they’re super easy to make and obviously totally delicious!

Oh, and these delightful treats are 100% vegetarian and vegan friendly.

Tips and Variations

Use fresh ingredients! Fresh strawberries, lime juice, and mint are the keys to making these popsicles taste their best. Yes, of course you can use frozen strawberries if you need to, but I promise fresh ones are worth the effort.

Get a good popsicle mold. A decent quality popsicle mold will ensure that your popsicles freeze evenly and release easily from the mold. Silicone or plastic molds are both great options – I like this cheap one.

Go wild with ram! I added about 2 ounces of rum to my recipe, which makes four popsicles, so it’s really a splash. Feel free to add more if you want a boozier popsicle. Or of course you can leave out the alcohol for a kid-friendly version.

  • 1 ½ the cup strawberry Fresh, ripe, quartered
  • 1 the lime juice and zest
  • ¼ the cup Fresh mint leaves
  • 2 spoon agave nectar You may need to add more or less depending on the sweetness of the strawberries you are using
  • 2 oz ram optional

instructions

  • Add strawberries, lime juice, lime zest and mint leaves to a food processor and process until smooth.

  • Pour fruit mixture into popsicle molds. To freeze. Serve when firm.
