The Strawberry Galette is bright, cheerful and full of spring flavor. Lemon and rosemary complement the sweet and sour berries perfectly. A rustic rye puff pastry crust encases the juicy filling.
This strawberry galette is the happiest little treat, perfect for brunch or dessert. When possible, it is best prepared with garden-fresh strawberries. Rosemary and lemon zest give the sweet and sour berries the perfect flavor complement.
We add rye flour to the crust for a healthy texture and extra depth of flavor. This is optional if you don’t have it handy.

How to make strawberry galette
FOR THE CRUSTSTEP ONE- In a skillet over medium-low heat, toast the rye flour, stirring, until golden brown, about 5 minutes. Cool.
STEP TWO – Put the flour, salt and sugar in a food processor and mix. Add the butter and shred until it’s grainy and looks like coarse sand.
STEP THREE – Turn on the food processor and gradually add cold water until the dough just comes together and forms a shaggy ball. Don’t mix too much.
STEP FOUR – Shape the dough into a round disk. Wrap and refrigerate for at least 1 hour or up to 3 days.
FOR THE FILLINGSTEP FIVE – In a large bowl, mix together the chopped strawberries, lemon zest, and rosemary.
In a small bowl, mix together the sugar, salt, and cornstarch. Add to the sliced strawberries and stir quickly to avoid clumping.
STEP SIX – Roll out the chilled dough into a circle about 14 inches in diameter. Transfer to a sheet of parchment (you can also unroll it on the parchment if that works well for you)
STEP SEVEN – Place the strawberry mixture in the center of the circle of dough. In the center of the cake, turn the strawberries cut-side down. This is just for looks, it will bake nicer this way.
Fold 5cm of dough over the strawberry filling and crimp about every 5cm. Brush with egg and sprinkle with caster sugar if you like. Don’t worry about it getting perfect, it will lose some of its shape in the oven.
STEP EIGHT– Remove the heated baking sheet from the oven and transfer the galette over it, lifting the parchment. Put in the lower part of the oven. Bake 20 minutes.
