Although I’ve seen recipes that say you can just put the lid on your pot and leave it overnight, this isn’t a good idea from a food safety perspective. Just take the extra step to transfer it to a large covered bowl or container and let it sit in the fridge overnight. Yes, it’s an extra step and more dishes, but nobody wants to get sick from food that’s been sitting out too long!
