Why Make Sprouted Cornbread? It’s a great option if you don’t have time to make traditional soaked cornbread.
If you’re struggling to source sprouted cornmeal and grist, at least use masa harina that’s pretreated with lime to release vitamin B3 (niacin), a key nutrient for detoxification.
I also recommend always using organic AND non-GMO certified corn due to the widespread GMO cross-contamination of organic corn crops in North America.
Another tip…it’s a good idea to wear gloves when you cut the jalapenos, otherwise your hands may tingle or even burn slightly afterwards!
Jars of chilies make a good substitute, but freshly chopped is more nutritious.
Be sure to use slightly acidified raw milk that you have on hand for this recipe. It’s a clever and economical way to use it when it’s no longer quite drinkable!

Preheat oven to 177°C

Mix flour, baking powder and sea salt in a bowl.

In a second mixing bowl, beat the eggs well. Add melted butter and maple syrup.

Slowly mix the flour mixture into the bowl with the wet ingredients until well combined.

Stir in the jalapenos and shredded pepper jack cheese.

Pour batter into a 9X9 greased pan. Bake at 350°F/ 177°C for 55 minutes or until a knife inserted in the center comes out clean.

Remove from the oven and let cool for 10 minutes. Slice and serve. Refrigerate what you won’t use in two days. This bread also freezes well!
