You can eat this beauty all year round! It really is that good!
Make it, eat it, enjoy it… and you can thank me later. Add it to your Thanksgiving menu right now, ’cause I’m sure!

Can this salad be made ahead of time?
This salad is super easy to prepare prepare yourself. You can make the dressing days in advance, and the bacon can be made in advance, too. Then it’s just a matter of throwing everything together just before serving. I would recommend not adding the cottage cheese too much ahead of time to keep the salad from getting soggy.
How long does spinach salad keep?
Unfortunately, this salad does not keep very well. Like most salads, everything tends to get a little soggy and wilted after a while, especially once the salad dressing has been added. If you want it to last longer, keep everything separate and add just before serving.
I am in love spinach salad and this recipe is one of my favorites. It seems simple and there is nothing special about it, but this homemade poppy seed dressing and the combination of simple ingredients wins every time.
