A Brazilian-inspired treat, passion fruit pudding is a creamy, sweet and tangy treat that is the perfect finishing touch to any meal.

I was gifted a couple of dozen passionfruits from a friend’s robust vineyard last week.

We immediately enjoyed a few (cut one in half and scoop out the pulp, juice and seeds with a spoon).

However, I knew we probably wouldn’t eat that many before a few went bad.

So I made passion fruit pudding to use up a bunch at a time. This variation is a tangy alternative to my basic custard recipe.

My method of extracting the passion fruit juice for the pudding below uses fine-mesh cheesecloth.

To save you some heartache, extracting passion fruit juice this way is much easier than other methods. It’s similar to separating whey from whipped milk.

Spicy passion fruit pudding

Passion fruit pudding is an easy-to-make, Brazilian-inspired treat that provides a creamy, sweet, and tangy ending to any meal.

  1. Preheat the oven to 200°C

  2. Line a medium-sized bowl with fine-mesh cheesecloth.

  3. Halve 12-15 passion fruits and spoon the seeds and pulp into the center of the cheesecloth.

  4. Gather the ends of the cheesecloth and gently squeeze the end with the pulp and seeds so the juice drips into the bowl. About a dozen passion fruits make 1/2 cup of juice.

  5. Set aside the remaining seeds/pulp in the cheesecloth for the topping.

  6. Whisk together the milk, cream, eggs, and sugar in a medium bowl.

  7. Slowly stir in the passion fruit juice.

  8. Pour the mixture evenly into four 4-ounce ramekins.

  9. Bake in preheated oven for 20 minutes or until light golden on top.

  10. Remove from the oven and let cool for 5 minutes.

  11. Drizzle the top of each ramekin with a teaspoon or two (optional) of topping and serve immediately.

Passion fruit syrup topping

  1. While the pudding is baking, mix the passion fruit seeds and pulp with the sugar in a small saucepan.

  2. Cook over medium heat until the sugar dissolves and the mixture begins to boil.

  3. Turn the heat down to low and continue cooking for a minute or two to slightly thicken the sauce.

  4. Remove the pan from the heat, set aside and allow the sauce to cool until the pudding is fully baked.
