- Lentil Taco Meat: I made lentil tacos last week, so I froze 1 cup of lentil taco meat to make these vegetarian southwest egg roll recipes this week. But if you don’t have leftovers, use the substitutions below.
- Red Bell Pepper: Red bell peppers are beautiful in color and sweet.

How to Make Vegan Southwestern Egg Rolls

First add all the ingredients except the egg roll wrapper and tajine seasoning and stir to combine.

Place an egg roll wrapper on a flat surface with the corner facing up. Add 2 tablespoons of Southwestern filling.

Then, bring the two corners from each side together.

Next, fold the bottom part into two folded corners, like an envelope.

Roll from the bottom to the top point, tucking the ingredients inside the egg roll wrapper.
How to Cook Vegan Southwestern Egg Rolls
To cook egg rolls, choose between air-frying and baking. Obviously, air-frying is faster, but not everyone has an air fryer, so baking is another option. No matter the method, these delicious egg rolls take no time to cook.
Air-frying

- Preheat air-fryer to 325 degrees.
- Place the egg rolls in a single layer in the air-fryer pan.
- Brush each egg roll with a little water or lime juice.
- Sprinkle with Tajine seasoning.
- Cook for 7 minutes; Turn the egg rolls and cook for another 7 minutes.
- Remove from air-fryer and cut in half, or serve whole.

baking

- Preheat oven to 400 degrees.
- Prepare a baking sheet with a silicone baking mat or parchment paper.
- Place the egg rolls on the baking sheet leaving some space between each egg roll.
- Using a pastry brush, brush each egg roll with a little water or lime juice and sprinkle with tajine seasoning.
- Bake for 30 minutes, turning the egg rolls halfway through baking.

Stuffed Southwest Egg Rolls
Assembling the egg rolls
Place an egg roll wrapper on a flat surface with one corner facing up.
Add 2 tablespoons of egg roll filling to the center of the egg roll wrapper.
Fold the 2 side corners of the egg roll wrapper over the filling and join the corners in the center.
Now, fold the bottom of the egg roll wrapper upwards at the corners joining the middle.
Roll the egg roll upwards towards the top corner.
Repeat for all 20 egg rolls.
Air-frying
Preheat air-fryer to 325 degrees.
Place the rolled egg rolls in an air-fryer pan in a single layer, not touching each other.
Cook for 7 minutes.
Turn the egg rolls and cook for another 7 minutes.
