i love cookies My kids love cookies. We all love cookies. They’re quick and easy to make, freeze well, and are the perfect bite-sized treat when you need something sweet. But oatmeal cookies? These are my favourites. You only have to take a quick look at my cookie recipes to see what I mean!
These Iced Oatmeal Cookies were inspired by the popular store-bought variety…but they’re soft, flavorful and so much better for you! I’ve cut back on the sugar and butter a lot…but trust me. No one will notice… or care. They are so delicious. They come together quickly and freeze great for quick snacks or lunch box treats. They’ll feel good feeding them to your family, and they’ll think you’re pretty awesome making them.

Ingredients for Iced Oatmeal Cookies:
- Oats– For these cookies you use oatmeal and oatmeal
- Flour– We used regular all-purpose flour
- butter– We used salted butter in these cookies. Although we didn’t try it in this recipe, coconut oil would probably work as well
- Brown sugar– Adds richness and helps make these cookies super soft and chewy
- applesauce– The applesauce replaces the extra butter and also helps add moisture.
- eggs– We used large eggs
- molasses– Gives the biscuits a caramel taste
- vanilla extract
- Cinammon– Gives the biscuits a warm flavor
- baking powder– Creates a soft and fluffy cookie
- Salt– You can adjust if needed – if you’re using unsalted butter you might want to add a little more.

How to Make Frozen Oatmeal Cookies:
- Whisk together the dry ingredients. In a large bowl, whisk together the flour, cinnamon, baking soda, and salt.
- Beat the wet ingredients. In a separate mixing bowl, cream together the butter and sugar. Add the eggs, one at a time, beating until fully incorporated. Stir in the applesauce, molasses and vanilla extract.
- Add flour and oats. Stir in the flour and oatmeal until well combined.
- Bake. Scoop the batter onto a parchment-lined baking sheet, about 2 tablespoons per cookie. Bake at 350 degrees for 10-12 minutes or until they start to turn golden brown around the edges but are still soft.
- Let cool down. Let cool on the sheet for 5 minutes before transferring to a cooling rack to cool completely.
- Do the icing. Meanwhile, whisk together the milk and powdered sugar to form a glaze. You want it to be thick but still able to drizzle.
- Drizzle the icing over the biscuits. Once your cookies are completely cool, use a fork to drizzle the icing over them, or place the icing in a small bag or piping bag and pipe it onto the cookies.
- Let absorb. Allow the icing to set before storing the cookies in an airtight container.

Tips & Suggestions
Why did my cookies spread?
There can be a number of different reasons why cookies spread, from height, temperature, or measuring your ingredients incorrectly. Cooling the dough before baking can help. When you take your cookies out of the oven and they’ve spread, you can quickly use the back of a spatula to press in the edges to reshape your cookies. You can also place a glass over the cookie and make a swirling motion. This will reshape them into thick, beautiful cookies.
How to make oatmeal:
To make the oatmeal for this recipe, simply pulse oatmeal in a blender or food processor until finely ground. You will need about 2/3 cup of rolled oats to equal the 1/2 cup of oatmeal needed for this recipe.
How Long Do Iced Oatmeal Cookies Stay Fresh?
Stored in an airtight container at room temperature, your cookies should stay fresh for about 4 days. Or freeze and separate the layers with a sheet of parchment paper for 2-3 months.

This recipe makes a great, healthy base for oatmeal cookies! Here are some tasty variations… with or without a drizzle.

- Make a sandwich cookie! Spread the bottom of one cookie with marshmallow cream, Nutella, or nut butter and top with another cookie.

- 1/2 Cup unsalted butter
- 1/2 Cup packaged brown sugar
- 2 large eggs
- 1/3 Cup unsweetened applesauce
- 1 tablespoon vanilla extract
- 1 1/2 tablespoon molasses
- 1 Cup all purpose flour
- 1/2 Cup oatmeal
- 1 teaspoon baking powder
- 1/2 teaspoon Salt
- 1 1/2 teaspoon Cinammon
- 3 cups oatmeal
glaze
- 1/2 Cup powdered sugar
- 2 teaspoon milk more if necessary

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone foil.

In a stand mixer or large mixing bowl, using a hand mixer, beat softened butter and brown sugar for 1-2 minutes or until light and fluffy. Add eggs one at a time, beating until combined. Add applesauce, molasses and vanilla. Beat until smooth.

In a separate mixing bowl, whisk together all-purpose flour, oatmeal, baking soda, salt, and cinnamon.

Add flour mixture to wet ingredients and mix on low until well combined. Add the oatmeal and mix again on low until combined. The dough will be really sticky. Chill the dough for 30-60 minutes to keep the cookies from spreading too much.

Use a 2 tablespoon sized cookie scoop to drop the cookies onto your prepared pan. Bake 10-12 minutes or until edges begin to look golden brown. Be careful not to over-bake – it’s okay if they still look a little soft. They continue to bake on the sheet after you remove them from the oven. Let them cool on the baking sheet for 5 minutes before transferring to a cooling rack.

While the cookies are baking, you can prepare the frosting. Whisk together the powdered sugar and milk in a small bowl. Place in a ziplock plastic bag and cut a small hole in the corner. Once the cookies have cooled, drizzle a small amount of icing over the cookies. Enjoy!
You can make your own oatmeal by pulsing oatmeal in a food processor or blender until it reaches flour consistency.
