I love my slow cooker! I don’t know how people survive without it. There are so many different recipes you can make with a slow cooker! My Slow Cooker Chicken Marsala, Smokey Black Bean Soup, and Vegan Sloppy Joes are some of my favorite recipes.

Recently my husband has been craving chili. (Well, just so you know…my husband loves meat. Any kind of meat.) So when he told me he wanted chili, I decided to give him a new twist on his classic favorite dish. I opted for no meat at all and added more veggies and different types of beans.

I know a lot of people out there don’t believe chili can taste so good without the ground beef, but this dish turned out to be one of my husband’s most requested meals. It’s a healthy and hearty version with just the right amount of spices.

WHAT INGREDIENTS DO I NEED FOR NO MEAT CHILI?

  • ½ red onion
  • ½ green pepper
  • 15 ounce can of Petite Diced Tomatoes
  • 15 oz can of corn kernel
  • 15 ounce can of chickpeas
  • 15 ounce can of dark kidney beans
  • 15 oz can of black beans
  • 2 tablespoons chilli powder
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • ½ cup vegetable broth
  • red chili flakes (to taste)
  • pepper (to taste)
  • Optional garnish: avocado, jalapeno, shredded cheese

HOW DO I MAKE SLOW COOKER NO MEAT CHILI?

STEP 1: Open all cans except for the diced tomatoes and drain.

STEP 2: Pour the canned ingredients into a slow cooker. Along with chopped red onion and bell pepper.

STEP 3: Add remaining spices & vegetable broth. Stir well to incorporate all ingredients.

STEP 4: Turn the slow cooker to low for about 4-5 hours.

STEP 5: Top with diced avocado, jalapenos and/or grated cheese.

Slow cooker chili without meat

Ingredients

  • ½ red onion

  • 15 ounce can corn kernel (no salt added)

instructions
