Slow Cooker Hidden Veg & Lentil Sauce – My Picky Eater

An easy and inexpensive hidden veggie pasta sauce made with frozen veggies and red lentils

If you’ve been following my blog for a while, you know I’m a huge fan of hidden veg pasta sauce. I did that first Hidden veggie pasta sauce years and my kids still love it!

I did one last year Slow Cooker Hidden Veggie Sauce with lots of fresh vegetables.

Given the current cost of groceries and the lack of fresh veggies, I thought I’d try a version with frozen veggies instead. So much cheaper to buy but still super nutritious.

I’ve also added red lentils for added nutritional value and also added some plant-based protein.

The frozen veggies and lentils are added to the slow cooker along with the garlic, chopped tomatoes, broth, and oregano.

Cook 2.5 hours on high or 4 hours on low.

After cooking, puree the sauce with an immersion blender until smooth.

If the sauce seems a little too thick at this point, you can add a little water or broth to thin it down to your desired consistency.

Mix with cooked pasta and serve with some shredded cheese or any other toppings your kids like.

It is also excellent as a tomato sauce base for pizza.

Save & Freeze

This sauce will keep in an airtight container in the refrigerator for up to 3 days.

It can also be frozen in either freezer bags, containers, or large ice cube trays. Thaw at room temperature and reheat before mixing with cooked pasta.

Ingredients

  • 250g mixed frozen vegetables
  • 50g dried red lentils
  • 2 Garlic cloves, chopped
  • 1 chopped canned tomatoes
  • 300ml vegetable broth
  • 1 teaspoon oregano

instructions

  1. Place all ingredients in the slow cooker and mix well.
  2. Cook 2.5 hours on high or 4 hours on low.
  3. Blend with a hand blender until the sauce is smooth.
  4. If the sauce seems a little thick, you can add a little water or broth to thin it out.
  5. Mix with cooked pasta.

Remarks
