Sloppy Joe Cornbread Casserole – a hearty and comforting dinner featuring classic homemade sloppy joe topped with sweet cornbread for a delicious and easy dinner any night of the week!

When I was a kid, I used to have Sloppy Joes for dinner every couple of weeks. They were just such a classic dinner and so easy to feed a large crowd. Now I never think about making them, but when I do, everyone loves them and we all want them again soon!

This casserole takes my homemade sloppy joes that I grew up with and turns them into a casserole, so no buns required!

How to Make Sloppy Joe Casserole

  1. Start by searing the ground beef and onion together until cooked through and onions are soft. Drain off any fat that is in the pan.
  2. Add tomato sauce, ketchup, mustard, Worcestershire sauce, sugar, salt and pepper and simmer until flavors begin to blend, 5-6 minutes. Taste the spices and adjust if necessary.
  3. Mix the cornbread mixture, milk, and egg in a bowl until well combined. Add the cheese and mix to combine.
  4. You can either use the skillet you browned the meat in (if it’s ovenproof) or an 8-inch square casserole dish. Pour the cornbread mixture over the sloppy joe and bake for 15-20 minutes until the cornbread is cooked through and golden brown.
  5. Remove from the oven and serve.

Can I bake this in a 13×9 inch baking dish?

Yes, you absolutely can, but all you have to do is double the recipe. There’s not enough meat or cornbread to fill a full casserole dish. So if you cook it as directed, use an 8-inch casserole dish.

What can I do with the leftovers?

This is one of those recipes that’s a great leftover. Simply store in an airtight container for 4-5 days. Reheat in the microwave, or if you have a large portion, you can reheat in the oven until warmed through.

Do I have to use Jiffy Cornbread Mix?

No, you definitely don’t have to. You can use any other cornbread mix you like, or you can even use homemade. I love my homemade cornbread recipe for this, I just cut it in half otherwise it would be way too thick for the amount of meat required.

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 small onion, chopped
  • 8 ounces of tomato sauce
  • 1/4 cup ketchup
  • 2 teaspoons yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon black pepper
  • 1 (8.5 oz) box cornbread mix
  • 1 whole large egg
  • 1/3 cup milk
  • 1/2 cup shredded cheddar cheese

instructions

  1. Preheat oven to 400ºF. Spray an 8 x 8 inch casserole dish with nonstick spray. Put aside.
  2. In a large skillet, sauté the ground beef and onion together until cooked through and onions are soft. Drain off any fat that is in the pan.
