It was a question that took me back to my culinary past. Have I ever made scrambled eggs? Yes, but a decade or so ago. A colleague was talking about a broken egg recipe on her morning radio show when a caller inquired about it. She said “scrambled eggs – heck, that’s just baked eggs, with a little cream and cheese”. That afternoon, I made scrambled eggs for lunch in my mother’s custard cups. It was that easy.

And I’m happy to put my scrambled eggs recipe back into my meal rotation.

Furnished eggs have a fairly long past. It originated in France, and the name refers to the flat-bottomed dish in which eggs are baked. They were all the rage during the Victorian era. Julia Child revived interest during her famous cooking shows. She said, “The egg is your best friend.” No argument there!

A small plate or ramekine is called a small bowl. Several years ago, when we were in France, we enjoyed baked eggs with cream and cheese. What is simpler than that?

For those who are blessed with fresh eggs every day, trying new egg dishes like scrambled eggs is fun and versatile in meal planning.

Scrambled eggs are super easy to fix for a quick breakfast, great enough for casual entertaining, and filling enough for a hearty dinner.

Here are some basic and master minced egg recipes that you can take in any direction you like!

Boiled eggs amounts

Butter, eggs, cream, cheese and spices. (Vary it to suit you. See my substitutions in the main recipe.)

Good add-ons

Vegetables, diced potatoes, mushrooms and leeks can be sautéed ahead of time and then placed in the bottom of a baking dish before eggs are added.

You can sprinkle it on top right before serving:

Bake for one or more

This is the beauty of sliced ​​eggs. You can bake grated eggs or scrambled eggs for a crowd. You can count on two eggs, two tablespoons of cream, and a tablespoon or so of cheese per person.

Almost anything that works in the oven (and sometimes is broiler-proof).

Ramekins, gratin dishes, casseroles, custard cups, and ovenproof cups all work well. Adjust the number of eggs and the amount of cream and cheese to suit the baking dish.

Muffin tins are excellent for scrambled eggs for a crowd. Line cans with foil liners for easy removal.

Master fried egg recipe

The classic grated egg includes cream and cheese. See my substitutions at the end of this recipe. This recipe serves 4.

ingredients

  • melted butter
  • 8 eggs
  • 8 tablespoons of heavy cream
  • Salt and freshly ground black pepper to taste
  • A cup of your favorite soft shredded cheese
  • 4 ramekins or oven-proof custard cups

directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Brush softened butter on the bottom and up the sides of the bowls.
  3. Gently crack two eggs into each bowl to prevent the yolk from breaking. (If they do, don’t worry. The finished dish will still be delicious.)
  4. Pour two tablespoons of cream over the eggs.
  5. Sprinkle with salt and pepper.
  6. Bake 3/4 of the way in the oven for 10-15 minutes or so, depending on the size of your bowls and whether the eggs and cream are cold or room temperature. Your goal is to get a nicely cooked white and a nicely cooked yolk that’s still a bit runny. If you like the yolks more cooked, bake a few more minutes, but remember that the whites will continue to cook a little more after you take them out of the oven.
  7. Sprinkle 2 tablespoons of the cheese over the eggs a minute or two before the eggs are set. This is enough to melt the cheese enough.

Easy alternatives

Half-and-half, evaporated milk, or a dairy-free equivalent works well. Seasoned tomato sauce can also be added to dairy products.

Try soy cheese instead of regular cheese.

A shallow casserole makes an attractive scrambled egg dish for two, four, or more people. You can put as many eggs in one layer as the plate can fit. Then adjust the amount of cream, cheese and add-ons.

“Scratch speed” is my term for using a store-bought ingredient to make something delicious and, just as importantly, easy. These are firm enough to dip into sliced ​​eggs.

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Sprinkle a cookie sheet.
  3. Roll out the dough and cut it into 12-16 slices.
  4. Roll each strip and pinch the edges.
  5. Lubricate it with butter.
  6. Bake until golden brown, 7-8 minutes or so.

Herbs to add to any scrambled eggs recipe

Along with seasonal vegetables, many herbs are associated with scrambled eggs.

I like to sprinkle finely chopped herbs over the eggs after baking to keep them coloured.
