ingredients

  • 2 1/2 tablespoons unsalted butter
  • 4 tablespoons light brown sugar, packed
  • 1 large yolk*
  • 1/4 teaspoon vanilla extract
  • 4 tablespoons cocoa powder
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon Salt
  • 1 tablespoon Chocolate chips, optional

instructions

  1. Preheat oven to 350°F. Grease two standard-size muffin liners with cooking spray or line with muffin liners. Put aside.
  2. Mix the butter and sugar in a small microwave-safe bowl. Microwave for 30 seconds, then remove and stir with a whisk. Repeat if butter is not completely melted
  3. Add egg yolk and vanilla extract. Stir until mixture lightens slightly.
  4. Add cocoa powder, flour and salt and fold with a rubber spatula until there are no streaks of flour. If using chocolate chips, add the chocolate chips and fold to distribute.
  5. Divide the mixture between your two prepared muffin cases and bake for about 18 minutes. You’ll know they’re done when the edge is set, but a knife inserted in the center still comes out with some brownie batter on it.
  6. Allow to cool slightly before eating!
