This delicious sheet pan pork chops dish doesn’t use a lot of ingredients, cooks everything in one pan, but combines unique flavors like apples and sweet potatoes to put together an amazing meal that the whole family will enjoy! Fresh herbs are the secret behind these chops’ rich flavor crust.
Ingredients
- Pork Chops: Usually a leaner cut of pork, you can use boneless pork chops, but leaving the bone on your pork chop will result in a tastier, more tender dish.
- Olive oil: Heart-healthy, light oil so everything cooks evenly and preserves the spices.
- apples: I like to use a sweeter apple like Gala or Fuji as it pairs well with the sweet potato.
- Onion: Yellow onions are a great choice for this dish as they add flavor without overpowering the other ingredients.
- sweet potatoes: They are sweet and nutty and are roasted to a creamy texture.
- Fresh herbs: Rosemary, Sage, Thyme, Parsley, Garlic. The possibilities are endless, but make sure you use fresh to really bring out the flavors.
How to cook pork chops with apples, onions and sweet potatoes

Start your sheet pan pork chops by preparing your fresh herbs. I used sage, rosemary, thyme and garlic to flavor my pork. Destem the herbs and chop finely.

Then, in a small bowl, grate some garlic with a micro-slicer.

Add the chopped herbs, salt and pepper and drizzle over some olive oil.

Then, lay out your pork chops on a prepared baking sheet.

Take your herb mix and brush both sides of the pork chops.

Then core and chop your apples, onions, and sweet potatoes.

Spread your chopped produce around the pork chops on the sheet pan and drizzle with olive oil.

And sprinkle with salt and pepper to taste before tossing in the oven at 350 for about 30 minutes or until the pork has reached an internal temp of 145.
