Whether it’s for a Christmas party, a casual get-together, or it’s Tuesday night and I don’t feel like cooking. That may seem like a lofty and unattainable goal for a humble recipe, but listen to me. Seven Layer Dip is such a high-flyer. There is no cooking involved. No advance planning. Not even room for error. And wherever you serve it, it’s guaranteed to draw a crowd. It may not be fancy or impressive. But it’s really tasty. And with the combination of vegetables, beans and Greek yogurt? It’s damn healthy too.

Ingredients for the seven-layer dip:

  • Refreshed Beans– Any brand you like (we used the Rosarita brand)
  • Rotel tomatoes– Rotel tomatoes have green chilies that add a bit of spiciness but are still mild enough for kids. You can substitute regular small diced tomatoes if you prefer.
  • taco seasoning– Use your favorite store brand or a homemade taco seasoning mix.
  • Greek yogurt (or sour cream)– We’ve made it both ways, and both are delicious!

How to make a seven layer dip:

  1. Combine refried beans and rotel tomatoes. In a small bowl, stir together the beans and tomatoes. Spread it on the bottom of your serving platter. This is your first level.
  2. Whisk together Greek yogurt and taco seasoning. Mix with the whisk and spread evenly over the bean layer.
  3. Mash the avocados. Halve the avocados and remove the stone. Place the avocado in a small bowl and mash with the lime juice and garlic salt. Spread the avocado mixture evenly over the Greek yogurt layer.
  4. Add remaining toppings. Finally, sprinkle the cheese, olive slices, diced tomatoes and chopped spring onions over the avocado layer.
  5. Cool. Allow your Seven Layer Dip to cool for at least 30 minutes to allow the flavors to blend. Serve with tortilla chips.

Seven layer dip will keep in the fridge for 3-4 days if well covered. Keep in mind that the layers will start to bleed and the avocado layer will start to brown. But it will still be delicious!

  • 1 16 ounces can refried beans
  • 1 10 ounces can rotel tomatoes mild or medium
  • 2 tablespoon taco seasoning
  • 1 Cup Plain yogurt or sour cream
  • 3 Middle avocados
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic salt
  • 1 1/2 cups grated cheddar cheese
  • 1/2 may black olives cut
  • 2 small Roma tomatoes rolled
  • 2 stems green onions chopped
  • In a small mixing bowl, stir together the chilled beans and rotel tomatoes. Spread on the bottom of a 9×13-inch pan.

  • Whisk together taco seasoning and Greek yogurt in a medium bowl. Spread over the chilled beans.

  • Mash the avocados to desired consistency and toss with lime juice and garlic salt. Spread on the yoghurt layer.

  • Sprinkle the shredded cheddar cheese on top, then sliced ​​olives, then diced tomatoes and last but not least – scallions. Chill for 30 minutes before serving.
