Someone recently asked me for a savory zucchini waffle recipe, so I made waffles out of my zucchini bites. You turned out great! I love how the edges brown and crisp in the mini waffle maker. Ingredients for zucchini waffles

  • Zucchini: Grate a medium zucchini until you get a packed cup. Squeeze out the excess liquid with a tea towel or paper towels.
  • Egg: You need a big egg.
  • Onion: Finely chop a quarter of a medium-sized onion.
  • Cheese: Use shredded sharp cheddar or non-dairy cheddar like Violife.
  • Panko: For gluten-free zucchini waffles, use gluten-free panko.
  • Kosher salt Spice up

How to make savory waffles

  1. Make the waffle batter: Mix all the ingredients for the zucchini waffle in a bowl.
  2. Cook waffles: Heat a mini dash waffle maker and drizzle with oil once hot.
  3. Add batter: Add 1/4 cup of the zucchini mixture and toss.
  4. Cook until brown. Close the iron and cook until the lights go out and the edges are golden brown. Set aside and keep warm while repeating the process with the remaining dough.
