This sausage, tomato and grits cheese casserole makes a great breakfast with eggs or as a main course for dinner and is served with green vegetables. We like grits anytime. They can be served in so many different ways and are a staple in most Southern homes.
Sausage, tomato and grits casserole Ingredients required:
pork sausage
Groats, (can be regular or quick cooking groats)
Onion
Green pepper
Salt
Black pepper
Chopped Garlic
Melted butter
Diced tomatoes with green chillies
Shredded cheddar or your choice of cheese
We recently remade this dish so we could update this recipe and it’s fantastic. We love it with a fried egg and this dish is really easy to reheat. Great to make at the start of the week and have for breakfast every morning. It would also be a great addition to any brunch or a holiday weekend. The flavor is wonderful and if you want to add some spiciness to this casserole, you can always make it with spicy sausage.
Possible substitutions:
- You can use smoked sausage, Italian sausage, andouille sausage, or spicy sausage
- If you’re not a fan of green chillies, just use diced tomatoes
- Change the type of cheese

Casserole with sausage, tomatoes and grits
This sausage, tomato and grits cheese casserole makes a great breakfast with eggs or as a main course for dinner and is served with green vegetables.
Servings: 8th portions
- 1/2 Pound pork sausage You can use smoked sausage or even Italian or Polish sausage in this recipe
- 3 cups boiled groats (can be regular or the quick cooking groats)
- 1/2 Cup chopped onion
- 1/2 Cup chopped green pepper
- 1/2 teaspoon Salt
- 1/4 teaspoon black pepper
- 1 teaspoon chopped garlic
- 2 tablespoon butter melted
- 1 10 ounce can diced tomatoes with green chiles, undrained
- 1 1/2 cups shredded cheddar or cheese of your choice

Combine sausage, onion, and green peppers in a skillet and brown on stovetop. drain, if necessary

Stir in salt, black pepper, minced garlic, butter, tomatoes and cooked grits. Simmer on low for 10 minutes.

Pour into a casserole dish. Sprinkle with shredded cheddar cheese. Bake in a preheated 350 degree oven for 30 to 35 minutes.
