Salty Lime Tortilla Chips – just scratch them

These Salty Lime Tortilla Chips are a healthier copycat version of Chipotle’s chips. Sliced ​​corn tortillas are drizzled with avocado oil and air fried before tossing with lime juice and salt. Homemade Salty Lime Tortilla Chips

i have a confession I love Chipotle’s Salty Lime Tortilla Chips.

By now most people have been to a Chipotle restaurant and know their amazing chips. Back when I was working at At the hospital, I got Chipotle at least once a week (on my lunch break) and quickly became obsessed with their fajita rice bowls, corn salsa, guacamole, and (obviously) their salty lime tortilla chips. Can you say it’s one of my favorite places to eat?

Since moving and not being able to enjoy their menu items as often, I’ve decided to create my own Chipotle favorites at home. When I first posted this recipe for homemade tortilla chips (back in 2011!), it was pre-air fryer, so I just baked them in the oven. Baking tortilla chips in the oven can make them a bit chewy. However, the air fryer makes THE BEST crispy tortilla chips! It’s life changing! Especially if, like me, you’re afraid of deep frying.

Salty Lime Tortilla Chips

If you don’t already have one, this is your sign to buy an air fryer.

Ingredients for Salty Lime Tortilla Chips

To make these Baked Lime Tortilla Chips you will need:

  • Corn tortillasUse white or yellow corn husks.
  • Avocado Oil SprayHelp crisp up the chips when air frying or baking.
  • lime juiceFreshly squeezed. For extra lime flavor, add a little lime zest.
  • Coarse saltI use margarita salt, but you can substitute kosher salt.

If you air fry (preferred method), preheat your air fryer to 360°.

Bake? I left instructions for oven baked tortilla chips in the notes section of the recipe for you to print out. Please note that baked chips can be a bit chewy compared to air fried tortilla chips.

Cut into quarters

Working in batches, cut a small stack of corn tortillas into quarters.

Sprinkle both sides of the quartered tortillas

Place a portion of quartered tortillas on a rimmed baking sheet and spray both sides with avocado oil.

Work in batches and add a single layer of tortillas to the basket/liner of your air fryer. DO NOT OVERFILL YOUR AIR FRYER. Air fry for 3 to 4 minutes. During this time, open the air fryer and gently separate and flip the chips if necessary until lightly golden and crispy.

Once crispy, remove and place in a rimmed sheet pan. Repeat with the remaining tortillas. I usually need about 4 to 5 batches in my air fryer.

When all the chips are done, spread them out on a large rimmed baking sheet.

Drizzle with lime juice

Drizzle with the desired amount of lime juice and toss.

Note: Alternatively, you can use a food-safe spray bottle to spritz the chips with lime juice to help distribute the lime juice evenly.

Drizzle with avocado oil and season with a pinch of salt

Work in batches and return the chips to the air fryer to re-crisp them (lime juice can make stains on the chips soggy).

once crisp, splash lightly season with avocado or extra light olive oil (should be a fine mist when sprayed) and pinch of margarita salt or kosher salt.

How to Store Homemade Tortilla Chips:

Store them in an airtight container or bag for 1 week or more. If they’re getting a little chewy, try air frying to crisp them up again. I would not refrigerate or freeze them.

How to heat homemade tortilla chips in the air fryer:

Preheat your hot air fryer to 300°. Place desired amount of tortilla chips in basket/insert and air fry at 1 to 2 minute intervals.

Salty Lime Tortilla Chips

  • 18 white corn tortillas
  • Avocado Oil Spray, or extra light olive oil
  • 1 to 2 tablespoon lime juice, can add 1/2 teaspoon lime zest for extra lime flavor
  • 2 teaspoon Coarse salt, I use margarita salt, but kosher salt can be used
  • Preheat your hot air fryer to 360°.

  • Working in batches, cut a small stack of corn tortillas into quarters (triangles).

  • Arrange a batch of tortilla triangles on a rimmed baking sheet and spray both sides with avocado or extra light olive oil spray.

  • Work in batches and add a single layer of tortillas to the basket/liner of your air fryer. DO NOT OVERFILL YOUR AIR FRYER. Air fry for 3 to 4 minutes. During this time, open the air fryer and gently separate and flip the chips if necessary until lightly golden and crispy.

  • Place tortilla chips on a large rimmed baking sheet and repeat with the next batch of tortillas. Repeat until all chips have been made.

  • When all the chips are done, spread them out on the large rimmed baking sheet. Drizzle with the desired amount of lime juice and toss. Alternatively, you can use a food-safe spray bottle to spritz the chips with lime juice for easier and more even distribution.
  • Once drizzled with lime juice, work in batches, placing chips back in the air fryer to crisp up any chips that may have had too much lime juice and are a little mushy. About 2 to 3 minutes at 300°.

  • Pour back into the sheet pan splash lightly season with avocado or extra light oil (should have a fine mist when sprayed) and a sprinkling of margarita or kosher salt.

  • Serve immediately.

Oven-Baked Tortilla Chips:
Preheat the oven to 350°. Follow the steps for preparing tortilla chips (cut, spray and arrange on two rimmed sheet pans – do not overfill). Bake each portion on the middle shelf for 8 minutes. Then turn carefully and bake for another 3 to 5 minutes or until crispy and lightly golden brown.
Drizzle or sprinkle with lime juice and place in the oven for 3 to 4 minutes or until crispy again. If there is too much lime juice in one spot, I can make the chips mushy.
Once crispy, drizzle lightly with oil and season with salt.
NOTE: In my opinion, baked chips can be a bit chewy compared to crispy air fried tortilla chips.
