As the weather warms up and outdoor gatherings return, I found the perfect recipe for July’s RPL Recipe Club: a very indulgent vegan version of a favorite potluck classic.
Potato salad! but like a really A good one. It has lots of fresh and bright flavor, a tangy creaminess that won’t weigh you down, and no weird add-ins like raisins!

What is RPL Recipe Club?
Each month, I will choose a rainbow plant life recipe that anyone in the RPL community can choose to make.
You can make it just for fun or You can enter to win an amazing prize every month! This month’s awards are listed below.
How to participate:
It’s easy to participate! Just follow these steps:
- Sign up for the Rainbow Plant Life newsletter (Only newsletter subscribers are eligible to win monthly prizes, although you can of course participate without signing up).
- Make this month’s recipe, take a photo of it and email it to me at [email protected] with the subject line “Recipe Club” by 11:59pm on the last day of the month. By sending your photo via email, you will be entered to win a prize.
- For an additional entry, Post photos on InstagramTag me @rainbowplantlife and use the hashtag #RPLRecipeClub.
At the end of each month, we’ll randomly select a winner and share our favorite photos here!

July 2023 Recipe: Vegan Potato Salad!
Celebrate summer with my vegan potato salad! I’ve tried a lot of potato salads over the years and this version is definitely my favorite. No overcooked potato wedges combined with globes of mayo here.
Instead of traditional mayonnaise, this potato salad dressing is made with creamy tahini and tangy vegan yogurt. It’s incredibly tasty but won’t make you lose weight. And there are lots of fun fresh flavors, from dill and chives to capers and lemon.
