This Roasted Cod with Broccoli & Cauliflower recipe calls for all the ingredients to go into one pan then into the oven; easy and delicious!

I try to cook fish at least once a week.  Especially now that I am expecting my first child, I try to eat it often to help lower the chance of developing post-pardon depression.
Fish is one of the best natural depression treatments you can find. Not only is it a super healthy protein that is low in fat, but it is also high in Omega 3, which is good for your heart.
I recommend including fish in the diets of my personal training clients all the time. Â It is an easy way to help manage their health goals.

I love it when I can make a meal with only one pan. Â Main reasoning behind this…less stuff to clean up, duh!
How do I make Roasted Cod with Broccoli & Cauliflower?
To prepare this recipe, I first chop up ½ head of cauliflower and ½ head of broccoli into bite size pieces and place it in a large roasting pan. I then put 3 fillets of cod in the middle of the pan.
The seasonings are pretty simple.  I drizzle the entire pan with approximately ¼ cup of extra virgin olive oil, then add about one teaspoon of minced garlic to the top of the fish only.
Lastly, put a dash or two of salt and pepper on the entire dish. (I obviously go by very precise measurements in this recipe).

Bake at 350 degrees for about 10-15 minutes, then put the broiler on high for another 2 or 3 minutes so that the broccoli & cauliflower can get a little more crispy. To serve the dish, I squeeze a little fresh lime and hot sauce on for some extra zing.

This is a no-fuss, flavorful dish that you can make in under 20 minutes. That is a win win in my book! Enjoy!

Ingredients
- 3 cod fillets
- ½ head broccoli
- ½ head cauliflower
- ¼ cup extra virgin olive oil
- 1 lime
- 1 teaspoon minced garlic
- dash of salt/pepper
- preferred hot sauce
Instructions
- Preheat oven to 350 degrees.
