Rice Paper Eggs (TikTok Recipe) ~ Macheesmo

There are many (many) horrible recipes out there on TikTok and all social media platforms. Shock recipes are all the rage these days, but true treasures are occasionally discovered. I started this little series called Biting Reviews where I review recipes as I eat them. These rice paper eggs are one of the best things I’ve reviewed.

So I thought I’d post them to share!

This is truly one of the few recipes I’ve seen online that I’ve made many times since. I eat this recipe at least once a week for breakfast or sometimes as a quick lunch.

Rice paper eggs (I’m not sure if that’s the best name for them, but that’s what I call them) are very quick to make, relatively cheap (even with the cost of eggs), and very flavorful and filling.

Let’s dive in and try them!

What are rice paper wrappers?

Rice paper wrappers, also known as spring roll wrappers, are sold in most grocery stores these days. They are very thin wraps, almost the size of a large tortilla, made from rice flour.

Normally you would soak them in water for a bit and then roll them up with fillings (like these chicken spring rolls).

Once soaked, the rice paper wrappers are very flexible, but also somewhat fragile and can be difficult to work with.

For this recipe, however, you don’t have to worry about a thing! You throw the dried casing in a pan and it magically works great.

How to make these rice paper eggs

This is a really easy recipe, but if you’re not used to the ingredients, some of them can seem daunting. Trust me. If you can make scrambled eggs, you can do this.

Start by placing your dry casing in a large skillet and adding some chili chips or chili oil. I prefer chili crisp if you can find it, which sometimes includes peanuts for crunch and has nice big chili flakes.

The oil is important as it prevents the rice paper from unrolling.

Add chili crisp.

Next you need to crack your egg! When you whip it, break the yolks and try to spread them evenly over the surface of the rice paper wrapper.

Boil the egg.

The egg will begin to cook through the rice paper wrapper. Just let it cook. The packaging can actually take quite a bit of heat, so don’t worry about it burning up.

When the egg is almost set, add what you like. I like fresh tomatoes and chives. The original version I saw on TikTok added sriracha and mayo to the filling, but I like to drizzle that on top.

Added toppings.

Cook for a minute or two more, until the eggs are fully set, then fold the casing over, forming a semicircle, and slide onto a cutting board.

Divide the rice paper egg into thirds, drizzle with sriracha mayo and serve immediately!

Filling ideas for these eggs

With these fillings, less is more. You want them really thin, but you can add pretty much anything. I like to use little leftovers in my rice paper eggs in the morning. Here are some ideas!

  • Ground meat like ham or bacon, or a little cooked seasoned ground beef.
  • Sauteed vegetables like mushrooms or zucchini.
  • Herbs such as coriander, chives, spring onions or parsley.
  • Pickled jalapenos.
  • Harder cheeses like parmesan would go well.

Whatever you add, remember they’re meant to be thin, so touch the filling lightly!

Rice paper eggs

These rice paper eggs are a perfect quick breakfast. Just a few ingredients and it literally takes minutes to make. Originally featured on TIkTok, this is my take on the viral street food recipe.

  • 1 Rice paper packaging
  • 1 tablespoon Chili crisp or chili oil
  • 1 big egg
  • 1 tablespoon Sriracha Mayonnaise
  • 2 tablespoon fresh tomatoes chopped
  • 1 teaspoon chives chopped
  • Set the pan to medium heat. Place the rice paper wrapper on top and immediately top with chili oil or chili crisps. Spread the chilli over the surface of the rice paper wrapper to keep it flat.

  • Crack an egg into the center of the rice paper wrapper and break it with a spatula. Spread the egg on the surface of the wrapper.

  • Add diced tomatoes or other desired fillings.

  • When the egg is mostly set, fold the rice paper wrapper in half.

  • Slide the rice paper eggs out of the pan and cut into thirds. Drizzle with sriracha mayo and garnish with chives. Serve warm.
