How to Make Red Velvet Brownies

Be sure to scroll to the recipe card below for the full recipe.

  1. In a microwave-safe bowl, cut the butter into chunks. Add the chocolate chips and microwave for 1 minute. Remove from the microwave and stir until completely melted. Let stand 3-4 minutes to cool slightly.
  2. Meanwhile, beat the sugar, eggs, vanilla and buttermilk until fluffy.
  3. Add the melted chocolate to the sugar mixture and mix well.
  4. Now stir in your food coloring until desired brightness. You will need about 1 teaspoon of liquid food coloring to get the color in the pictures. You can add more or less as you like.
  5. Mix in the flour and baking powder until just combined and no white streaks remain.
  6. Pour into prepared baking pan and bake until a tester comes out clean, about 25 minutes. Remove from the oven and let the brownies cool completely.

to make icing

  1. Mix cream cheese and butter until smooth.
  2. Add vanilla extract, powdered sugar and milk. Beat until it is a spreadable and smooth consistency. You can adjust the sugar and milk if the frosting is too thick or too thin.

recipe tips

  • As with all brownie recipes, be careful not to mix them too much. Beating the eggs helps create the crispy top that they are known for. So you should mix in the food coloring before adding the flour or they will mix too much and won’t bake as well.
  • Don’t overcook your brownies. Once the edges are firm and start to tear, check to see if they’re done. For the perfect chewy and fudgy texture, you don’t want to overcook them and let them dry out. Keep in mind that they will continue to cook after you take them out of the oven. So, crumbs on your toothpick are good, just not a lot of raw ones are better.
  • Make sure your brownies are completely cool before topping them with frosting.
  • This recipe yields an 8-inch square pan. Do you want to double it? Bake in a 13×9-inch pan, simply doubling all the ingredients.
  • Feel free to skip the frosting if you don’t want to do it. You can also mix white chocolate chips into the batter instead. There’s great texture and flavor to have in every bite.

storage

Store your brownies in an airtight container for 3 to 4 days. If you topped with frosting, be sure to store it in the fridge because of the cream cheese. They will keep in the fridge for about 5-6 days. I like to just let them come to room temperature before serving.

Freeze

Brownies actually freeze pretty well. I like to let them thaw before coating them with frosting. The frosting freezes well, I just think it changes the texture slightly. You can freeze an entire pan or individual slices. Just let them thaw on the counter before serving.
