This granola cookie recipe combines the wholesome goodness of granola with pure cookie indulgence. They’re a little crunchy, a little chewy and 100% delicious!

These cookies are great in many ways, but mostly because:

  • You can Use up the rest of the muesli that no one eats
  • You can convince yourself that it is a healthy treat, because muesli is an ingredient
  • They will last up to a week in an airtight container
  • You can decide if you want to add chocolate chips or not, or even Make your own variation (see some ideas below).

Ingredients for granola biscuits

To make a batch of these cookies, grab your apron and these ingredients:

  • plain flour (all-purpose flour)
  • Cinammon
  • Muesli
  • grated coconut
  • White sugar
  • Brown sugar
  • butter
  • Honey
  • caustic soda
  • hot water
  • Chocolate chips (optional – but not in my opinion!)

How to make granola cookies

Preparation

Start by preheating the oven to 190 degrees Celsius/375 degrees Fahrenheit.

Also, you need to lightly grease two baking sheets.

Sieve, stir, melt, mix

Sift the flour and cinnamon into a mixing bowl.

Stir in the granola, coconut and sugar.

Put the butter and honey in a saucepan and melt over low heat.

Mix the water and bicarb together and add to the pot. The mixture foams up quickly. Once fluffy, add to the dry ingredients in the mixing bowl and stir.

Add the chocolate chips if you want to add them and stir to distribute them throughout the mixture.

Form tablespoons of the cookie dough mixture into balls and place at least 1 inch (3 cm) apart on the baking sheets.

Bake granola cookies.

Bake

Bake for 8 minutes or until golden in colour.

For a crispier cookie, let cool completely on the sheet.

If you want it softer, after 5 minutes, place it on a cooling tray.

Variation Ideas

  • For a day, use raw granola, whole wheat flour, and pepitas instead of chocolate chips healthier version
  • Use chopped nuts instead of chocolate chips nuttier, crunchier version
  • For example, use golden syrup or maple syrup instead of honey subtle taste variation
  • Double the amount of cinnamon you added Cinnamon Granola Cookies.
