This easy baked date slices recipe really highlights how wonderful dates are in baking. When these chewy dates are paired with butter biscuit and sweet lemon frosting, you really can’t go wrong!

The recipe for date slices
This recipe comes from a little yellow notebook my mom kept when I was little, which my mom, sister and I have added to over the years.
I think this particular sliced date recipe may have come from our high school science class.
I know my sister made it many times and I loved it so much that she wrote it in the notebook as “Libby’s Date Slice”.

How to make date slices
Preparation
you need one Cut can into slices (approx. 28 x 18 cm) – grease and line with baking paper, leaving excess on the sides to lift the disc out after it has set.
Preheat your oven to moderate (180 degrees Celsius, forced air).
Melt and mix
When measuring the dates, remember that they are chopped dates – chop first, then measure.
Combine the flour, sugar, coconut and dates in a large mixing bowl and stir to combine.
Place butter and golden syrup in saucepan and stir over low heat until butter is melted. Remove from heat and add vanilla extract.
Pour the melted mixture into a mixing bowl with dry ingredients and stir well to combine.

Pour the mixture into the prepared disc mold and press evenly into shape with the back of a dessert spoon.
Bake for 20 minutes.
Also, set an alarm for 15 minutes. Then you need to start making the frosting as the slice will be hot frozen.
Icing Date Slice
For the lovely lemon glaze, mix together the powdered sugar, melted butter and 2 tablespoons lemon juice and stir.
Add more lemon juice as needed to create a mixture runny enough to spread over the slice.
Pour the glaze over the slice immediately after removing it from the oven.
Spread evenly on the disc and sprinkle with coconut if you like.

Allow to cool to room temperature, then remove from the mold and cut into squares with a sharp knife.

This slice will be glazed while hot, so start preparing the glaze about 5 minutes before the slice finishes cooking.
Combine powdered sugar, melted butter and 2 tablespoons lemon juice and stir. Add more lemon juice as needed to create a mixture runny enough to spread over the slice.
Pour frosting over the slice as soon as you remove it from the oven. Sprinkle with coconut if you like.
