Frying is a fantastic way to prepare cabbage. We already love sautéing cabbage, but now we’re addicted to frying it. If you’ve never roasted cabbage, this is where you need to start. When the cabbage is roasted in the oven, it caramelizes, becoming tender and sweet. It’s awesome.
Our recipe below keeps the cabbage simple and roasts the cabbage with oil, salt and pepper. But of course you can always add spices such as seasoning mixes or fresh herbs.

Preparing this Roasted Cabbage recipe couldn’t be easier. First toss the chopped cabbage with some fat, salt and pepper. Then roast in a hot oven until the cabbage is browned, wilted and sweet.

How to cut the cabbage
You can roast cabbage in a variety of shapes, like steaks or wedges, but we love slicing it up. After roasting, the cabbage looks like ribbons. So here’s how I do it:
- Remove any shredded or bruised outer leaves.
- Quarter the cabbage and cut out the core.
- Cut the cabbage quarters into strips about 1/2 inch thick.

Cabbage might sound boring, but this is one of our favorite side dishes. White cabbage is our favorite for this recipe, but other types of cabbage will do as well (roasting times may vary).
Our recipe below keeps things simple, toasting the cabbage with oil, salt, and pepper. But of course you can always add spices such as seasoning mixes or fresh herbs.
For 4 to 6 people
you will need
1 medium head of cabbage, about 1 ½ pounds
2 tablespoons avocado oil
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1 tablespoon fresh lemon juice
directions
Preheat the oven to 425° Fahrenheit. Prepare a baking sheet—we’ll fry right on the baking sheet, but line a silicone baking mat or sheet of parchment paper for easy cleanup.
Prepare the cabbage by cutting it into four wedges and removing the core. Next, cut the wedges into strips about 1/2 inch thick.
Place the cabbage on the baking sheet and toss with the oil, salt and pepper. Spread in one layer.
Sauté the cabbage, without stirring, until just beginning to brown, about 15 minutes. When you notice browning, stir the cabbage, redistribute it into an even layer, and roast for another 5 to 10 minutes. We enjoy our cabbage deep brown, so we tend to leave the cabbage in the oven a little longer.
Season with lemon juice and serve.
