Easy Protein Peanut Butter Cups

nut butter: can not do peanuts? Any kind of nut butter will work! Attempt:

  • cashew butter
  • almond butter
  • sunflower butter

Chocolate: Instead of dark chocolate chips, feel free to use a dark chocolate bar or semi-sweet chocolate chips.

Ingredients

  • 1/4 Cup creamy, natural peanut butter
  • 2-3 tablespoon Vanilla Protein Powder We like Garden of Life
  • 1 Cup dark chocolate chips
  • 1 tablespoon coconut oil

instructions

  • Fill a mini muffin tin with muffin cases. Then spray them with coconut oil cooking spray and set aside.

  • In a medium bowl, mix together the peanut butter and protein powder. Start with 2 tablespoons of protein powder and work up from there. The amount of protein powder depends on how drippy your peanut butter is to start with.

  • Next, separate the peanut butter and protein mixture into 12 marble-sized balls (~1 teaspoon) and set aside.

  • In a microwave-safe bowl, melt dark chocolate chips and coconut oil, stirring every 45 seconds until chocolate is smooth.

  • Place a teaspoon of the chocolate mixture in the bottom of each muffin case. Then place the muffin tin in the freezer for about 10-15 minutes or until the chocolate has set.

  • Next, place a protein peanut butter ball on top of each hardened chocolate and gently flatten the ball with your finger until it has a smooth surface.

  • Finally, add 2 more teaspoons of the melted chocolate onto the peanut butter to each liner to complete your peanut butter cup

  • Place the muffin tin in the freezer for an additional 10-15 minutes until the chocolate has set.

  • Enjoy!

  • Store these mugs in the freezer in an airtight gallon-sized container or ziplock.
