Pomegranate Margarita – Jenny Claiborne’s sweet potato spirit

Have you noticed a theme in my cocktails this year? They are all pretty, pink, and full of pomegranates! I seriously love this fruit and I always buy it because it’s Baby J’s favorite. With leftover arils and some juice, I knew I had to make a classic even more special.

This festive and beautiful cocktail really adds some color to my dry bar. It’s easy to make and tastes great with a pink salt rim. I sweetened this pomegranate margarita with some agave, but feel free to leave out the sweetener if you prefer a more tart drink.

I’ve had so much fun creating new cocktails for my blog, Instagram and my new cookbook. And now that my kitchen renovation is complete, I can host beautiful holiday parties and serve these awesome drinks from my dry bar.

Pomegranate Margarita

material

  • 1 oz 2 tablespoons fresh lemon juice
  • 1 oz 2 tablespoons of pomegranate juice
  • 2 oz 1/4 c triple sec
  • 4 oz 1/2 cup Tequila Silver
  • 3-4 teaspoon agave
  • Pomegranate seeds for garnish
  • Pink salt for the rim

instructions

  • Add lime juice, pomegranate juice, triple sec, tequila and agave to a cocktail shaker with ice. Shake vigorously. Strain into a salted (or not) glass over ice. Garnish with fresh pomegranate seeds.
