Cheesy, sassy pizza quesadillas are as flavorful as you can imagine. They’re a messy, super fun, and lightning-fast way to satisfy your next pizza craving.

I’m not sure there’s a better combo than pizza and quesadillas. Cheesy, buttery, crunchy, salty, I could go on and on. Sometimes these are a meal at our house. Other times just a snack or a late night kitchen raid.

That being said, I like to think I’ve perfected my quesadilla preparation and have a few secrets. Butter the tortilla first, don’t just melt butter in the pan. Cover both tortillas completely with butter on one side.

Second, the layers. When assembling the quesadilla, you want two layers of cheese, one on top of each tortilla. Start with a buttered side-down tortilla, then cheese, toppings, another layer of cheese, and finally a buttered-side-up tortilla. All the cheese on both sides keeps everything melted together.

If you’re slicing toppings for the inside, cut them in half like pepperoni. These little guys get HOT fast in all that cheese and sauce.

Nothing will make you drop your quesadilla hop faster than one bite ripping out a piece of hot pepper and it banging your chin with hot cheese and sauce. Trust me I made it!

I cut my pepperoni in half and when I add other meats and veggies I always make sure they are bite sized. Don’t worry, the melted cheese keeps it all in.

Speaking of other toppings, if it’s going to be on a pizza, you can put it in these quesadillas. I love adding some olives and banana peppers to mine while the kids just take care of all the meat.

How to cut a quesadilla

Cutting a hot quesadilla into manageable pieces is easy with a pizza cutter or large knife. Simply place the pizza quesadilla on a cutting board and run a wheeled pizza cutter across it.

Or grab your big chef’s knife and swing over it in one quick motion to slice. Avoid sawing back and forth or it may tear and just become a mess.

You’ll need these ingredients to make these pizza-inspired quesadillas:

  • flour tortillas
  • butter
  • shredded mozzarella cheese shared
  • pizza sauce
  • Pepperoni halved
  • fresh basil leaves, thinly sliced ​​OPTIONAL

  1. Preheat a large non-stick skillet to medium-high heat. Lightly butter one side of two tortillas with about 1/2 teaspoon butter and place buttered side down in the hot skillet.
  2. Top with â…“ cup cheese, 2 tablespoons pizza sauce, pepperoni, and basil. Top with the remaining cheese and cover with the second tortilla, buttered side up.
  3. Allow the quesadilla to cook for 2-3 minutes. When the cheese begins to melt and the bottom tortilla is lightly browned, gently flip the quesadilla. Continue cooking until all the cheese is melted and the tortilla is crispy on the edges.
  4. Using the spatula, place the quesadilla back onto a cutting board and cut into chunks while still hot. Serve warm.
