Create this seasonal Starbucks drink in the comfort of your own home! In this Pistachio Oatmilk Latte, homemade pistachio butter is mixed with sweetened condensed milk, a shot of espresso, warm frothed oatmilk (or milk of your choice), and drizzled with a topping of salted brown butter. Makes 1 cup (10 ounces) but can easily be doubled to serve more.
Another day, another Starbucks recovery.
Last month my three sisters and I flew in from three different states to meet up for a sisters’ trip in Clearwater, Florida to celebrate our oldest sister Kelly’s 50th birthday. It was a short weekend trip but we definitely made the most of it. Three days filled with many Laughter, the best inside jokes, good food and drink, and meaningful conversations. We couldn’t have asked for a better weekend. It’s been a few years since we’ve all been together, so this was definitely a special trip that we’ll always remember.
Luckily we all love coffee. And what was even luckier was that our hotel was next to a Starbucks where we went for coffee every afternoon. I usually just order a vanilla oat milk latte. But after seeing Kelly order a pistachio latte, we all changed our order. It’s been an obsession ever since.
What is a pistachio latte?
Just the most incredible coffee drink I’ve ever had. It (Starbucks version) combines frothed milk with espresso and pistachio sauce and is topped with salted brown butter. Mine is similar but swaps out the pistachio sauce for a more natural pistachio butter approach. Something to note is that since we’re using a nut butter, there may be some settling – depending on how smooth you can work it. Personally, I didn’t find this disturbing or even noticeable.
To make this pistachio oat milk latte you will need:
for the salted brown butter topping:
- butter (unsalted) – Adds a delicious nutty flavor while browning.
- Brown sugar (dark) – Adds a caramel-like sweetness and texture when combined with the butter.
- Vanilla – Adds and enhances flavor to this topping.
- flaky salt – Gives this topping the perfect salty touch.
for the latte:
- pistachio butter – Adds fullness and delicious nutty pistachio flavor.
- sweetened condensed milk – Used for sweetening. To be honest I made this myself, but the hassle compared to buying organic with the same ingredients? It is worth it.
- oat milk – I like Oatly Barista Blend for that. Or use milk of your choice. (more on milk below)
- espresso shot – Or use 2 to 3 ounces of strong brew coffee.
Make the Brown Butter Sugar Topping:
In a small skillet, add 1/2 tablespoon unsalted butter. Heat on medium-low until melted and milk solids are starting to brown and fragrant.
Remove from heat and add 1/2 tablespoon dark brown sugar.
Stir to combine. Once cool, stir in a splash of vanilla extract and a pinch of flaky salt.
Step aside. As it cools, it will become even firmer.
Make the Pistachio Oatmilk Latte:
In a 10 ounce mug, add 1 tablespoon pistachio butter and 1 tablespoon sweetened condensed milk.
Brew or pour in a shot of hot espresso.
Stir or blend until combined.
Keep in mind since we are using a nut butter there will be some settling.
Meanwhile, add 3/4 cup oat milk (I use Oatly Barista Blend – not sponsored) or other milk that steams and froths well to a steamer/frother. My Keurig (linked in the recipe) does both heating and frothing. Alternatively, you can heat milk with a whisk and whip until foamy.
WHAT IS THE BEST MILK FOR FOAMING?
The best milk for frothing is cream, half & half, whole milk, oat milk (try a barista mix!), almond milk, coconut milk, and soy milk.
Pour the warm frothed milk into your mug.
Make sure you get all of the foam. 🙂
Sprinkle some of the brown butter sugar on top.
And top with finely chopped pistachios, if you like.

Pistachio Oat Milk Latte
FOR THE SALTED BROWN BUTTER TOPPING:
- 1/2 tablespoon butter
- 1/2 tablespoon dark brown sugar
- 1 prize flaky salt, taste good
- 1 syringes Vanilla
FOR THE PISTACHIO LATTE:
- 1 tablespoon pistachio butter
- 1 tablespoon sweetened condensed milk
- 1 shot espresso
- 3/4 Cup oat milk, preferably Oatly Barista Mix or your choice of milk
- 1 prize pistachios, chopped, for serving (optional)
MAKE THE BROWN BUTTER TOPPING:
