What better way to celebrate the arrival of summer than by treating yourself to a large scoop of ice cream? We have the perfect recipe for you: Pistachio Nice Cream. It is super creamy and delicious yet low in fat and sugar.
If this is your first time hearing about a “beautiful” cream, all you need to know is that it’s a healthier version of the classic gelato. Instead of being made with lots of sugar and double cream, it only includes frozen fruit and a few healthy side dishes. That means it is dairy free, vegan and sugar freesuitable for people with a plant-based diet, with a milk allergy or on a diet.
For this recipe we used frozen bananas as the base and then added soaked pistachios. We drizzled the mixture with lemon juice to keep the bananas from turning brown and blended it all together into a super silky pistachio ice cream. You can enjoy it straight away as a soft serve or pop it back in the freezer for a more spoonable consistency.
We love this recipe because it’s doable without an ice machine. No need to spend hours stirring the gelato, just freeze whole bananas for an hour or two and flash until creamy. This means your healthy homemade ice cream will be ready in no time!
Soaking the pistachios before blending them is an important step as it makes the nuts softer and easier to blend. Plus, it makes sure they release their green pigments into the bananas, giving you a nice pastel green ice cream cone. You only have to soak them for an hour, and you can do this while the bananas are freezing to save time.
You can use our recipe to make a medium-sized cup of pistachio ice cream, about 500g (1lb). A serving of two large scoops of gelato (approx. 100g / 3.5 oz) has only 200 caloriesand it only covers 12% RDI of sugar And 6% RDI from saturated fats.
