This pineapple casserole recipe is a family favorite. This southern classic is a must try dish, it makes a wonderful side dish.

How tasty is pineapple casserole?

This dish is very different, some might say unique, but that’s what makes it delicious. The ingredients are an odd combination, but they work, and I assure you, you must add this dish to your recipe list. First, let’s look at the ingredients:

  • Can of crushed pineapple in pineapple juice
  • Can of tangerines (more on this below)
  • White granulated sugar
  • all purpose flour
  • Grated sweetened coconut
  • Shredded cheddar cheese – yes.. CHEESE
  • Pineapple juice from canned pineapple
  • butter
  • Ritz Crackers

A few things about our casserole that are different than most are the addition of coconut and tangerines. We love these additions, but you can always substitute another fruit for the oranges, like cherries, or just add another can of pineapple. We love the combination of oranges, pineapple and coconut.

It goes well with ham and is a wonderful side dish for Easter or Christmas. This southern pineapple casserole is so easy to make and the butter cracker topping is so good. Well…some people don’t add the pecans either, but I think they go in the casserole.

Is this casserole a side dish or a dessert?

This dish can be a side dish or a dessert because it’s sweet! To be honest, I can just eat it pure, this dish is so delicious. But we usually serve it as a side dish for the holidays. When we have new guests at the table who have never eaten this dish, they always ask for the recipe. You’ll be amazed at how easy it is and how it works with almost anything.

Tips and recipe notes:

  • I suggest using the shredded pineapple, but you can use the pieces too, we just prefer the shredded one.
  • Canned pineapple works best for this recipe as the sweetness of fresh pineapple can vary.
  • Add the cheese, you’ll be glad you did.
  • If you don’t like it, you can omit the coconut.
  • This casserole will keep in the fridge for a few days and can easily be reheated in the microwave or on the stovetop. Simply cover with foil and heat to 350°C for 10-15 minutes.

  • 1 20 ounces Can of mashed pineapple, drained (reserve 60ml juice)
  • 1 15 ounces Can tangerines, drained (you can substitute another 20-ounce can of pineapple chunks or cherries, peaches, or other fruit of your choice)
  • 1/2 Cup white granulated sugar
  • 6 tablespoon all purpose flour
  • 1 Cup grated coconut Optional
  • 2 cups grated cheddar cheese
  • 1/4 Cup Pineapple juice from the crushed pineapple above
  • 1 Stick butter or margarine or 8 tablespoons or 1/2 cup melted
  • 40 to 50 Ritz Crackers crushed
  • 1 Cup pecans or walnuts Optional
  • In a large mixing bowl, combine the crushed pineapple, tangerines, sugar, flour, coconut, grated cheese, and pineapple juice. Mix well

  • Spray a 2-quart casserole dish with cooking spray and spread the pineapple mixture in the dish.

  • Melt the butter and mix in the crushed Ritz crackers. Scatter over the pineapple. Scatter pecans on top. Bake in a preheated oven at 350 degrees for 30 to 35 minutes until the top is brown.
