Pesto Chicken Sandwich

Quick and easy lunch or dinner recipe for a delicious toasted sandwich!

ingredients

  • 2 Boneless chicken breast
  • 1 el Italian spice
  • salt and pepper taste
  • 1 tablespoon olive oil
  • 4 Ciabatta rolls
  • 4 tablespoon mayonnaise
  • 6 tablespoon Pesto
  • 4 slices mozzarella cheese
  • 1 Roma tomato thinly sliced

instructions

  • Halve the chicken breasts lengthways to obtain 2 chicken chops from each chicken breast. Season both sides of the chicken with Italian seasoning, salt and pepper.

  • In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Cook the chicken on both sides for about 5 minutes or until the chicken reaches an internal temperature of 165 degrees.

  • Take the chicken out of the pan.

  • Assemble the sandwiches by slicing the ciabatta rolls in half. Spread about 1 tablespoon mayonnaise on one half of each roll. Spread about 1¼ tablespoons of pesto on the other half of each bun, then place a chicken cutlet on top of each sandwich.

  • Add 1 slice of mozzarella to each sandwich, followed by a slice of tomato and romaine, if desired.

  • Cover the sandwich with the ciabatta roll with pesto. Brush the top roll lightly with olive oil, then return the sandwiches to the pan. Cook each sandwich for 2 minutes per side or until the mozzarella is completely melted.

  • Serve immediately and enjoy!
