What you will need

- Banana: You will need a medium-sized ripe, lightly-stained banana. You can substitute applesauce or pumpkin puree, but the bars will be less sweet.
- Nut butter: Use natural peanut butter. You can substitute peanut butter or sunflower seed butter to make it nut-free.
- Maple syrup: Use pure maple syrup or substitute agave syrup.
- Vanilla: Artificial or pure vanilla extract is better.
- Oats: Use old-fashioned oats (rolled oats).
- Job’s: You can use store bought oat flour or homemade oat flour. If you are making your own oat flour, make sure it is finely milled.
- Baking soda: You try baking sodaNot baking powder.
- cinnamon: Technically optional but always a nice addition!
- Chocolate chip: You can use any dairy-free chocolate chips or dark chocolate chips like Enjoy Life or Camino. Chopped dark chocolate will also work.
How to Make (with Pictures)
Step 1: Prepare to Bake
Prepare to bake by preheating the oven to 350 F and either spraying an 8×8-inch pan with cooking spray or lining it with parchment paper.
I would suggest parchment to make the bars easier to lift from the pan and slice.
Step 2: Mix the wet ingredients
In a large bowl, mash the bananas to a paste with a fork then add the peanut butter, maple syrup and vanilla. Blend until completely smooth.

Step 3: Add the dry ingredients
Add the oats, oat flour, baking soda, salt and cinnamon and mix to combine, then stir in the chocolate chips.

Step 4: Bake the bar
Spread the mixture into the prepared baking pan, spreading it evenly with a spatula, wooden spoon or even your fingers. Sprinkle extra chocolate chips on top – Optional but recommended!
Don’t smooth the top completely, just make sure it spreads evenly around the pan. Leaving some texture on top will help crisp them up.

Bake your bars at 350 F for 16-18 minutes or until a toothpick inserted in the center comes out clean.
You must not check with a toothpick. The bars should be fairly firm and crisp on top, and golden brown around the edges when they’re done.

Step 5: Cool and slice
Once out of the oven, let cool in the pan for at least 30 minutes before slicing. This helps ensure the bars hold together.
Don’t skip chilling or they may get too mushy and fall apart. I would recommend chilling for at least 30 minutes if not allowing them to cool completely.
