If you’re looking for a tasty alternative to the classic lemon curd, we have a delicious recipe that uses peaches instead of lemons. With just three simple ingredients, you can encapsulate the taste of summer in a creamy pudding both vegan and sugar free — perfect for all your sweet creations!
Fresh ripe peaches, some starch and a dash of oat milk are all you need for this recipe. We have dispensed with the addition of refined sugar, eggs and butter, which are typical for dessert quark. This way you prepare one really healthy pudding and enjoy the floral notes of peaches without ingesting added sugar or fat.
Our peach quark is something between jam and quark: it has a higher fruit content than classic quark, but unlike peach jam it does not consist exclusively of peaches. We’ve added starch to replace the binding and thickening effect of the egg yolk and plant-based milk to add fullness and texture. The result is a dense yellow curd, e.g shiny and thick like the normal one, with a nice fruity taste.
Using peaches and oat milk means the curd will be naturally sweet, so no added sugar is needed. Just make sure your peaches are very ripe as they taste sweeter; but if you feel the curd is a little too tart for your liking, add a dash of maple syrup or a few spoonfuls of zero-calorie erythritol.
For milk, we chose oat milk, which has a subtle flavor as we didn’t want to mask the delicate flavor of peaches. But we also tried it with the chilled coconut milk drink and it tasted great too! You can find it in the lactose-free milk section of your supermarket; and if you want, you can even use canned coconut milk, which is even creamier—but keep in mind that the curd has more fat in it.
It takes less than 10 minutes to make this pot-to-jar vegan peach curd. Then just let it cool down and put it in the fridge and it’s ready to use in your desserts. It’s perfect for filling layered cakes, tarts, pastries and cheesecakes. Or spread it on toast, pancakes and scones. No matter how you end up having it, we hope you enjoy this recipe as much as we do!
