It’s a no-cook porridge oats recipe that takes moments to throw together and then sits in the fridge overnight.

It makes a great oat breakfast or snack and you can grab it in the morning and eat it hot or cold!

I usually take it to work and eat it cold on the train or in the office. Don’t forget a spoon! The taste reminds me of peaches and cream. Yummy.

How to make peach oatmeal

Mix the oats with soy milk (or your favourite milk), add the peaches, pumpkin seeds and optional spices. Stir and leave in the fridge overnight!

Is it vegan?

I like these overnight oats with soy or oat milk to keep them vegan, but if you only have dairy milk then that works fine, too.

What fruits can I use?

You can use fresh, tinned or frozen peaches. Chop them into little pieces and you’re good to go. If you’re out of peaches (or they’re not in season) then pears make a great replacements. So do most fruits I’ve tried to be honest, especially mandarins and oranges.

Can I freeze peach overnight oats?

You sure can! Just make sure you leave them in the fridge for a few hours first to the oats soak up all the liquid. You can then let them defrost and eat them cold or even warm them up. I’ve found the best way to reheat them is in the microwave, in thirty second bursts.

Peach Cobbler Overnight Oats

What great overnight oats combo of peaches, pumpkin seeds, lemon juice and maple syrup. All goes really well together, refreshing and filling!

Diet: dairy-free, egg-free, gluten-free, vegan
Prep Time:3 minutes
Total Time:3 minutes

Optional

  • 2 mint, fresh (finely chopped)
  • ½ tsp cinnamon
  • ½ tsp pumpkin spice

  • Dice the peach, chop the pumpkin seeds and mint leaves.

    1 peach, 1 tbsp pumpkin seeds, 2 mint, fresh

  • Throw everything in a jar, screw the lid on top, shake, and off it goes into the fridge. The next morning add a dash of milk, a sweetener (if you want) and enjoy 🙂

    ½ cup rolled oats, ¾ cup soy milk, 1 tsp maple syrup, 1 tsp lemon juice

Make-ahead? Yes, prep the night before, it’ll be even more flavorful that way!
