


These peach muffins are filled with chunks of delicious peach chunks. It’s the best breakfast or snack!
Who doesn’t love a good muffin? For breakfast or lunch or dessert?
Here are a few of my favorites:
Apple Carrot Muffins, Banana Crumble Muffins And Fudgy Avocado Muffins. Yummy.
I used to hate breakfast. I think it was mostly the thought of preparing something as soon as I woke up that killed the dream for me.
Then I realized that peach muffins are easy to make and you can store them in the fridge or freeze them for later.
So easy. So many possibilities.
These muffins are amazing. They are soft and moist and the peach flavor is amazing. Every time I make them I lick the batter out of the bowl. Literally.
Note: You can substitute applesauce for the coconut oil/butter and if you’re not a big peaches fan, use berries instead of the peaches. My boys and husband love these and I hope you will too! They are the perfect breakfast or treat!

Preheat oven to 400 degrees F. Grease muffin tin or line with paper liners.

In a large mixing bowl, mix together the egg, butter (or applesauce), sugar, salt, cinnamon, lemon juice, and vanilla.

Mix flour and baking powder in a small bowl. Add flour mixture and milk alternately to a large mixing bowl and stir until just combined. Fold in the peaches.

Bake in the preheated oven for 18-20 minutes. Delicious warm, have fun!!
