Tender pasta with garlic roasted cherry tomatoes and fresh basil. This easy dish is the perfect weekday pasta and takes just minutes to make!

Preheat the oven to 425°F.

Line a sheet pan with foil and add the tomatoes, garlic, balsamic vinegar, oil, oregano, basil, ½ teaspoon salt, and ¼ teaspoon black pepper.

Roast for 15 minutes or until tomatoes are done. Fry for 1-2 minutes to add some charcoal/color after softening.

Meanwhile, in a large saucepan of boiling salted water, cook the pasta until tender but firm. Reserve 1/2 cup of pasta water. Drain (do not rinse) and place in a large bowl.

Add the tomatoes with the pan juices and mix everything together.

Serve and garnish with fresh herbs and Parmesan cheese.
