What are Pasta Fagioli?
Pasta e Fagioli is a traditional Italian dish that means “pasta and beans”. It’s made with simple ingredients like pasta, beans, and tomatoes, and sometimes has some meat or vegetables added to it.
Different regions have different variations of pasta fagioli. It can be prepared with meat, but is often prepared without it. Some recipes include a bit of pork, calamari, or beef. Traditionally, it’s very hearty, almost stew-like, and less brothy than the fagioli soups we often see in North America.
In this recipe, we make a version similar to Olive Garden’s, with the addition of sausage and veggies so it’s hearty enough to feed a family. However, you can omit the meat if you wish!

The main difference between minestrone and pasta e fagioli is the variety of vegetables in minestrone. Fagioli is mostly pasta and beans with some broth (I add a few veggies like celery and onions for extra flavor), while minestrone has more veggies and usually more broth.
How to make Pasta Fagioli
I make a lot of great soup recipes and this tasty recipe is at the top of our list! it’s easy, delicious, and hearty (and we think it’s even better than the Olive Garden Fagioli recipe)! This can be done without sausage, reducing the broth a little.
- brown sausage and onion according to the recipe below. Add remaining ingredients except pasta and simmer for 10-15 minutes.
- While the soup is simmering, cook the noodles in salted water until al dente.
- Stir the noodles into the bean mixture and serve.
Serve pasta fagioli soup alongside some warm garlic bread and a Caesar salad for the perfect meal.
Freezing Pasta Fagioli Soup
- Cool the soup completely before packaging for freezing.
- Place the soup in gallon or quart size plastic zip lock bags.
- Lay bags flat in the freezer in a single layer, when frozen, stack bags to save space.
- Freeze up to 3 months.

Pasta e Fagioli soup recipe
Pasta fagioli soup, also known as pasta e fagioli soup, is hearty, comforting, and delicious. And it’s ready in less than an hour!

In a large stockpot or Dutch oven, heat olive oil over medium-high heat. Add ground Italian sausage and cook, without stirring, for about a minute. Crumble with a wooden spoon and continue cooking until browned, 3-5 minutes. Drain excess fat.

Push the cooked sausage to one side of the pot and add the onion and garlic to the other half and cook, stirring occasionally, until onion is soft, 1-2 minutes.

Add chopped carrots, celery and diced tomatoes. Stir and cook until tender, 4-5 minutes.

Add basil, Italian seasonings, thyme, rosemary, tomato sauce, chicken broth, and drained and rinsed beans. Season with ½ teaspoon each of salt and pepper.

Bring to a boil and reduce the heat to a simmer. Cover and cook for 10-15 minutes or until vegetables are tender. Add more water if needed, one cup at a time.

In a separate saucepan, add water and bring to a boil over medium-high heat. With salt. Cook noodles according to package directions. Drain well and toss with a little olive oil. Put aside.

Once the veggies are soft, stir in the noodles until heated through.

Garnish with parsley and grated Parmesan, if you like.
This soup can also be prepared without meat if desired.
Store leftover soup in an airtight container in the refrigerator for up to 4-5 days. Reheat on the stovetop or in the microwave.
