Today we are very excited to share our recipe for Maracuja Bars (aka Lilikoi Bars) with you. It’s our vegan no-bake version of these delicious dessert bars – just fabulous!
When you use passion fruit in recipes, you know you’re in for a treat. This tropical fruit contains a delicious juice that is sweet and slightly tart at the same time.
So we extracted that juice and made a wonderful passion fruit pudding out of it to fill our bars. You can also buy passion fruit cream if you’re in a hurry.
For the base layer, we made a soft batter out of rolled oats, cashew butter, and maple syrup. It’s like a granola bar, but sticky.
For the topping, you can use store-bought muesli instead and sprinkle it over the passion fruit cream.
However, we recommend making your own homemade healthy granola from scratch – it’s super easy and you can use the excess for your next breakfast.
And the best part about making these passion fruit bars is that you don’t even have to bake them. Instead, just pop the can in the fridge and let the pudding set.
