These crispy, golden and delicious Parmesan Asparagus Fries are a delicious way to eat your veggies! Bake them in the oven or do them in the air fryer!

Someone suggested I make asparagus fries and I thought it was a great idea. So that the crumbs stick better, I dredged the asparagus spears in egg flour dough and then breaded them with Parmesan and panko crumbs. This takes roasted asparagus to a whole new level! Once baked or air fried, they are crispy perfect! If you are gluten free or non dairy, do not worry about it! I’ve also tested them with gluten-free crumbs, gluten-free flour, and dairy-free parmesan, and they were just as good. Move over fries, these asparagus fries are addictive and delicious!

Ingredients

  • Asparagus: Find thicker spears and snap off the ends from a pound of asparagus.
  • Panko: Purchase seasoned panko for added flavor. If you only have regular, add additional seasonings, such as onion powder, garlic powder, salt, and dried herbs.
  • Parmesan cheese: In a large shallow bowl, combine grated parmesan with panko.
  • Flour and Eggs: In another bowl, whisk together two eggs and two tablespoons of all-purpose flour.

How to air fry asparagus

  • Dip the asparagus in the egg mixture and then in the panko parmesan. Spray each generously with olive oil.
  • Place the spears in the basket in an even layer and air roast the asparagus at 380°F for six to seven minutes, turning halfway through.

How to bake asparagus fries

  • If you don’t have an air fryer, you can bake the asparagus instead. First, preheat the oven to 200°C, spray a tray with oil and place the breaded asparagus on the tray.
  • Spray the sticks with oil and bake for 12 to 14 minutes, turning halfway through.

What to serve with asparagus fries

These crispy asparagus fries are a great accompaniment to shrimp, air fry steaks, baked salmon or fried chicken. If you want to add another side, try them with mashed sweet potatoes or roasted butternut squash. You can also serve them with ranch or garlic aioli if you want a dipping sauce.

How to save

Store in an airtight container in the refrigerator for up to two days. Heat them in the air fryer or oven until warm.

  • Mix the breadcrumbs and Parmesan in a large shallow bowl.

  • Place the egg and flour in another shallow bowl and whisk well.

  • To bake, preheat the oven to 425F.

  • Spray a sheet pan with oil and place the breaded asparagus on the sheet pan.

  • Spray with oil and bake for 12 to 14 minutes, turning halfway, until golden and tender.
