This Paloma cocktail is made with fresh grapefruit juice and lime juice, tequila blanco and simple honey syrup with a spritz of sparkling water. Light and refreshing, it just goes down.

I can’t believe it took me so long to post a paloma recipe! There are already many recipes for palomas, but here is my take on them.
Fresh grapefruit and lime juice with tequila lightly sweetened with honey Simple syrup with an optional twist if you like; infuse the simple honey syrup with bay leaves; it is so delicious! Make a salt and sugar rim.

- Use Fresh grapefruit juice – Instead of grapefruit soda, use fresh grapefruit juice.
- Use Fresh Lime Juice – Instead of lime soda, we use fresh lime juice here.
- Tequila Blanco – A light or clear tequila is nice here, giving the Paloma a bouncy look with a clean flavor.
- Simple honey syrup – instead of sugar we make a quick honey syrup. Top with bay leaves for extra flavor. Vegans can substitute agave.
- Sparkling mineral water – Instead of soda, we use mineral water because we can all use more minerals, right?
- salt and sugar rim – Instead of a salt rim or a sugar rim, we mix and match both for the ultimate flavor!
How to make a Paloma cocktail
Make the simple honey syrup. Heat equal parts water and honey, stir until well combined, add a few bay leaves to taste. Let cool down. You can do this 1-2 days in advance for a stronger infusion.

Mix salt and sugar combine and place in a shallow bowl or plate. Rub the rim of the glass with lime or grapefruit and dip the rim of the glass in the salt and sugar mixture to coat.

Mix the cocktail in a shaker. Fill with ice, add grapefruit juice, lime juice, tequila and simple honey syrup. Shake.

Pour into a glass filled with ice and top up with a small splash of sparkling mineral water.

Yes! Prepare a large batch of palomas in a pitcher, skipping the ice and soda (until ready to serve) and refrigerating up to a day ahead.
Palomas are delicious with mezcal (a smoky tequila) but may need extra lime juice and simple syrup to balance it out.
Mix 1 part grapefruit juice with 2 parts sparkling water and a squeeze of lime over ice. Add a few drops of grapefruit bitters.

- Make Simple Honey Syrup: Mix one part honey with one part water in a small saucepan over medium-low heat. (eg, 1/4 cup honey and 1/4 cup water, or make more.) Optional: Add a few bay leaves and let steep 30 minutes or overnight.
- Edge- Mix one part salt and one part sugar for the rim. Transfer to a plate or shallow bowl. Rub the rim of the glass with grapefruit or lime wedge, then dip in the salt and sugar mixture to coat. Fill with ice.
- Cocktail- Put ice in a shaker. Add grapefruit juice, lime juice, tequila and simple syrup. Shake to combine. Pour into the glass filled with ice and top up with mineral water.
- Garnish with a grapefruit slice and a fresh bay leaf. Enjoy!
Remarks
Feel free to use 1 teaspoon of agave for the simple honey syrup.
