What is the difference between sugar squash and regular squash?

You’re probably familiar with the big pumpkins that hit your local grocery stores every October. These are often quite large and ideal for carving jack-o’-lanterns. They tend to be very fibrous and thready inside, and while their seeds are great for flavoring and roasting, they aren’t great for cooking and baking.

Sugar squash are smaller and sweeter, and their flesh tends to be firmer and less fibrous than regular squash. These are great for cooking and baking. They are also often referred to as pie pumpkins.

What is the difference between pumpkin puree and pumpkin pie filling?

Pumpkin puree is simply roasted or steamed and mashed pumpkin flesh. The pumpkin pie filling is made from pureed pumpkin, but sugar and spices are also added. While it’s ideal for making pumpkin pie, it really is not interchangeable with pumpkin puree.

Can you freeze pumpkin puree?

Yes you can. Recipes calling for pumpkin puree don’t always call for a full can, but excess pumpkin puree can be frozen in a freezer-safe container or resealable plastic bag for up to 3 months. Thaw before use.
