Prepare this special breakfast for Mother’s Day.
DOUGH
1 cup of lukewarm water
3 cups bread flour
8 tablespoons unsalted butter, room temperature
2 1/2 teaspoons instant yeast
3 tablespoons of granulated sugar
1 1/4 teaspoons salt
1/4 cup nonfat powdered milk
1/4 cup potato flour
FILLING
1/2 cup orange marmalade
8-ounce package cream cheese, at room temperature
GLAZE
1 cup powdered sugar
1/2 teaspoon orange extract
3-4 tablespoons cream
directions
Mix all the dough ingredients together in the bowl of an electric mixer. Mix with the mixer attachment until the dough forms a ball around the whisk. Switch to the dough hook.
Knead on 2nd speed for 10 minutes, until the dough just touches the rim of the bowl and maybe a little sticks to the bottom. In a bread machine (or by hand) this should form a smooth ball.
Place the dough in a lightly greased bowl. Cover the bowl and let the dough rise at room temperature for about an hour, until it has almost doubled in size.
Lightly grease a 9×13 inch baking pan. Mix the jam and cream cheese together and set aside.
Transfer the risen dough to a lightly floured work surface and roll out into a 16 x 12 inch rectangle.
Spread the filling evenly over the surface of the dough, leaving an inch free of jam on one long side.
Roll the dough lengthways into a roll, curling towards the free edge. When the log is fully rolled, pinch the long seam shut as best you can.
Using a serrated knife, cut the stem into 12 slices.
Spread the buns evenly in the prepared pan.
Cover the pan and let the buns rise until they reach the top of the pan, about 45 minutes to 1 hour.
While the buns are rising, preheat the oven to 350°F.
Bake the rolls until brown around the edges and beginning to turn golden in the center, about 30 minutes. Allow the buns to cool to room temperature in the baking pan.
Mix together the sugar, orange extract and enough cream to form a spreadable glaze. When the buns have cooled, spread the glaze over all of the buns and allow to dry before serving.
