Nothing beats a one pot meal. Try this simple sausage and pepper dish. You can serve it over cooked rice or pasta. Plus, you can use any sausage your family likes; We like sweet Italian chicken sausage. Sweet peppers can be of any variety/color.

sausage & peppers
Ingredients:
2 tablespoon olive oil
1 pound sweet or spicy Italian sausage (4-5 pieces of sausage), sliced
3 Cute Bell peppers (green, yellow, red or orange), sliced
1 big sliced onions
2-3 cloves garlic, chopped
1 teaspoon Salt
1/2 teaspoon freshly ground black pepper
1 tablespoon Italian seasoning
1 (15 ounces) Can of Petite Diced Tomatoes
1 (8 ounce) can tomato sauce
1/2 cup white wine, optional
directions:
- Heat the oil in a large saucepan over medium heat. Add the sliced sausage; bake until browned on all sides, according to cooking instructions on package. Remove the sausages from the pot (set aside), wipe most of the fat from the pot, leaving about a tablespoon for the veggies.
- Add the peppers and onions cooking over medium heat until they start to soften. Add garlic, salt, pepper and Italian seasoning and cook for another minute.
- Stir in tomatoes and tomato sauce. Increase the heat until the sauce begins to boil; Reduce heat and let simmer over low heat.
- Return the sausages to the pan and stir in the wine. Cook until the sauce has thickened a bit and the peppers and onions are soft, about 10 minutes.
- Serve with cooked rice or pasta (our favorite is rigatoni).
