On busy weeknights, simple one-pot pasta dishes are my favorite.
I’m a bit of a creamy-cheesy sauce addict when it comes to sauces, but this is a lighter version that uses just a little parmesan and some milk instead of lots of heavy cream.
This means that this dish feels pleasantly light, but still has a lot of flavor.

👩🍳PRO TIP Make sure you simmer on low so the milk doesn’t crack. If it splits, don’t worry! Add an extra large splash of cold milk, stir thoroughly, and let cook on very low for another minute or two, until the sauce comes together again.

🍽️ What to serve it with
Gorgeous, slightly creamy, tender pasta with succulent chicken and plenty of slightly al dente broccoli (add the broccoli a few minutes early if you like it softer, but I like mine with a bit of bite).

One pot pasta with chicken and broccoli
This Chicken Broccoli One Pot Pasta is a quick and delicious weekday meal! Ready in 30 minutes.
INSTRUCTIONS

Heat the oil in a large skillet (sauté pan) over medium-high heat.
2 tbsp olive oil

Add the chopped onion, chicken, salt and pepper and saute until onions are translucent, 5-6 minutes.
1 small onion, 3 chicken breasts, ¼ tsp salt, ¼ tsp black pepper

Add the garlic, stir and cook for 30 seconds.

Add the wine and bring to a boil. Simmer for 1-2 minutes, then add broth and milk.
60 ml (¼ cup) white wine, 600 ml (2 ½ cups) good quality chicken stock, 180 ml (¾ cup) whole milk

Bring to a boil, then stir in the noodles. Let it bubble again slightly and place a lid on the pan. Reduce the heat and cook for 10 minutes.
300 g (10.5 oz) dried pasta shapes

Add broccoli, stir, replace lid and cook for another 5 minutes, until broccoli is tender and pasta is cooked through.

Remove the lid, stir in the lemon juice and parmesan.
1 tsp lemon juice, 50g (½ packaged cup) grated parmesan

Serve with a sprinkling of freshly chopped parsley and black pepper.

✎ Notes
If you want to add additional veggies, mushrooms and chopped kale or spinach are great additions. Add the mushrooms before adding the wine and add the kale/spinach during the last 5 minutes of cooking.
Would you like it creamier?
If you want it creamier you can double the parmesan and add a dash of double (heavy) cream.
