This Lemon Herb Chicken Broccoli & Rice is a flavorful one-pot wonder that’s perfect for any night of the week. Just a handful of ingredients and less than 30 minutes is all it takes to make this amazing meal.
HERE’S WHAT YOU NEED:
- 3 chicken breasts
- 2 cups chopped broccoli
- 1 1/2 cups short grain rice
- 2 1/2 cups chicken broth
- 4 tbsp olive oil
- 1 tsp Italian seasoning
- 2 lemons
- Pinch of salt & pepper
HOW DO I MAKE ONE POT LEMON HERB CHICKEN BROCCOLI & RICE?
STEP 1: In a large Dutch Oven, begin to heat olive oil. Season the chicken with salt & pepper. Feel free to use a large pot or deep pan if you don’t have a Dutch oven.
STEP 2: Carefully place the chicken in the hot oil and sear on both sides, then place on a plate. The chicken breasts won’t be cooked through at this point, but don’t worry…we’ll put them back in the pot.
STEP 3: Reduce the heat to a minimum. Add the broth, rice, and Italian seasonings to the saucepan. Scrape the bottom to remove any stuck chicken pieces. Let the rice cook for 2-3 minutes, then add the chicken to your pot along with the chopped broccoli.
STEP 4: Drizzle with the juice of 1 lemon. Slice the second lemon and add to the pot. Cover and continue to simmer for about 20 minutes, or until the rice is tender and the chicken is tender.
