These oil-free roasted potatoes are perfect for breakfast. They are easy to make and very satisfying!

A hearty, hearty breakfast should always include a side of potatoes! They’re one of my favorite comfort foods and without all the added oil, they’re not even bad for you.
Ingredients for these oil-free roasted potatoes
These roasted breakfast potatoes have minimal ingredients. All it takes is a little seasoning to give them a classic flavor. Here’s what you’ll need:
- Potatoes (any kind should work. I like a combination of red and yellow potatoes)

- Garlic powder
- Onion powder
- Italian seasoning
- Sal
- Ground black pepper

Are potatoes good for you?
Potatoes are starchy vegetables that are fine to consume in their whole, unprocessed form. Starchy vegetables and whole grains actually make up an important part of a healthy plant-based diet.
In this type of diet, carbs are not the enemy! Potatoes are fine to eat, but the nutritional benefits depend on the type of potato you consume.
Potatoes with a more vibrant color, such as sweet potatoes and purple potatoes, have more antioxidants, so it’s best to choose them more regularly. Antioxidants fight cell damage from free radicals. You can learn more about antioxidants here.
However, milder colored potatoes such as yellow and white potatoes are a good option every now and then. I wouldn’t recommend eating them every day, but they’re not bad for you! Especially when you don’t coat them with fatty oils before cooking.
Potatoes are also quite filling, so eating them can fill you up and prevent you from overeating other foods.
How to make these breakfast potatoes
Making these roasted potatoes without oil is very simple.
First, set your oven to 425 degrees Fahrenheit.
Next, cut up about 2 cups of potatoes. You don’t have to peel them first, but you can if that’s your preference.
Next, place the potatoes in a medium-sized bowl and add all the other ingredients. Mix it all up.
When everything is well mixed, spread the diced potatoes evenly on a baking sheet. First line the baking sheet with something like parchment paper to prevent the potatoes from sticking.

Once the oven has preheated, bake the potatoes for a total of 25-30 minutes. Remove the pan halfway through cooking and toss the potatoes around to ensure even cooking.

- 1 ½ teaspoons maple syrup
- ½ teaspoon Garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning
- ⅛ teaspoon salt
- ⅛ teaspoon ground black pepper

Set your oven to 425 degrees Fahrenheit.

Cut the potato into fairly small pieces (see pictures for reference). You don’t have to peel the potatoes first, but you can if you want.

Put the diced potatoes in a bowl, add the rest of the ingredients and mix everything together.

Line the baking tray with baking paper to prevent sticking, then spread the potatoes out evenly.
