Allergy-friendly Energy Bites

These No Bake Energy Bites are the perfect snack for the fridge. They’re packed with healthy whole ingredients and naturally healthy fats, proteins and carbohydrates.

Sunflower seeds are a high-fiber powerhouse and are packed with vitamins and minerals like vitamin E. Having them in both the whole form and the seed butter make these energy bites a nut-free option to take to school! That’s perfect because these Energy Bites are loved by both kids and adults!

Grab one or two and eat up a filling, bite-sized snack, pack it in your lunch box with your kids, or serve it up as a healthy after-dinner treat.

Ingredients needed:

  • Sunflower butter (although really any seed or nut butter will work here, but sunflower butter for nut-free!)
  • Unsweetened grated coconut (can swap for more flax or omit)
  • Ground Flaxseed
  • Raw Sunflower Seeds
  • vanilla extract
  • Chia seeds
  • maple syrup (or honey)
  • Optional Add-Ins: Dried cranberries, raisins, chocolate chips… you name it!

Make sure your sun butter (or any nut butter you use!) is fresh and not thick or dry. Thick or dry nut butters result in a ball of energy that doesn’t hold together well.

And this is our favorite part!

No food processor required!

Most Energy Bites rely on dates for their sweetness and texture, which means they need to be made in a food processor…but not this one!

This means that to prepare them all you have to do is mix the ingredients in a bowl! It is really that easy.

Once the ingredients are fully combined, roll into balls, set and store!

Get the kids involved!

Kids love making these! Let them choose the add-ins, shuffle something, or even roll something! They’ll love their allergy-friendly classroom energy ball when they see it in their lunch box!

How to save them

Store Energy Bites in a covered container in the refrigerator for up to 2 weeks. They can also be stored in the freezer for up to 3 months.

Note: They are stable at room temperature, so can be kept out of the fridge for a few days if needed, but are best kept in the fridge.

Freeze:

Store in an airtight container or bag in the freezer for up to 3 months. Let sit in the fridge overnight to thaw, then eat as desired.

Tasty nut-free energy balls to pack
  • 1/3 Cup unsweetened grated coconut toasted
  • 1/4 Cup ground flaxseed
  • 1/2 Cup raw sunflower seeds
  • 1/3 Cup sun butter homemade or store bought
  • 1/2 tsp Vanilla
  • 1 tsp Chia seeds
  • 1 tablespoon maple syrup or honey
  • 1/2 Cup Mixture of dried cranberries, golden raisins, and dark chocolate chips (these or these are great)
  • Combine all ingredients in one and mix well.

  • Roll into balls and let cool, you can further perfect the shape if chilled in the fridge.

  • Remove and enjoy!
