Coated with a generous sprinkling of poppy seeds and sesame seeds, these delicious bagels have one crispy crust and a soft chewy crumb. We made them with gluten-free flour, maple syrup, almond milk, and vegetable oil, which means they are vegan and sugar free to.
Also known as bajgiel or beigeBagels get their name from the Yiddish word beggl, which means “ringing”. These donut buns have their origins in the Jewish communities of Poland and are now incredibly popular around the world, especially in the United States. The basic recipe consists of yeast bread dough, which is formed into a ring by hand. The bagel is first poached in boiling water and then baked at a high temperature to give it its distinctive glossy and crispy crust.
For this gluten-free version, we swapped bread flour for store-bought one gluten free flour mix. You can easily find it in your local supermarket in the gluten-free section. It is a mixture of starch, rice flour, corn flour and xanthan gum. The basic bagel recipe uses only water as the liquid, but we’ve also added warm almond milk and vegetable oil to add flavor and help develop the crumb.
While there are countless bagel variations, the New York-style bagel is definitely one of our favorites. It is made by boiling the bagels in water and barley malt syrup. Since barley malt syrup is pretty hard to find, we chose maple syrup, but you can use honey if you’re not vegan. Finally, NYC bagels are traditionally topped with a mix of sesame seeds and poppy seeds, or “everything bagel” condiments.
